Perquín Is Jersey City’s Most Exciting New Restaurant | Eater NY

"A recently opened Honduran-leaning restaurant at 85 Morris Street in Paulus Hook (opened in November) leans into messy, hands-on dining: pork tostadas and shrimp tacos arrive with utensils but will likely go untouched, finger-licking sauces from herby aji verde to creamy salsa blanca invite diners to dive in, and just above the bathroom sink a fuzzy spray-painted script jests: “Aren’t you glad that you ate with your hands?” Owner Bryan Girón, 29, an alum of Barbuto, Bread & Salt, Tao Hospitality, and Shukette (where he was most recently chef de cuisine), notes that “[In New York] you have to wait months, sometimes, to eat somewhere,” and that he wanted it to be “approachable, accessible, and not so stuffy.” Honduran food is the primary draw, with influences from Ecuador, Mexico, and greater Central America; the handwritten blackboard menu changes frequently and features snacks, traditional street food playfully called chucos or “messy,” masa-centric entrees, a rotating dessert, a daily special, and an optional pre-fixed menu. The kitchen has introduced a chef’s table in view of the kitchen (the only table that requires reservations) so Girón can approximate the price of a check while experimenting. Crowd favorites include pollo chuco (fried chicken smothered in tomato salsa and salsa blanca atop lightly fried green bananas; gluten-free), salchipapa (fries with chorizo, nduja, and American wagyu hot dogs with a generous drizzle of aji verde), and a surprising hit: the baleada—“Neither taco nor quesadilla,” their version comes with refried beans, plantains, sumac, and onions stuffed into a pillowy flour tortilla; “We have two guys who are incredible at making the baleada. No one can stretch the dough like that,” he says. Girón applies techniques from Italian and Middle Eastern cooking, making many components in-house—spice blends, aiolis, french fries, pickles, vinaigrettes, crema, cheese, homemade syrups for the bar—and even turns chicken skins from chullos into chicharrón specials: “I’m applying everything that I’ve learned to what I know about Latin food and creating my own style,” he says. His family roots (moving to Bayonne at eight and summers in Tegucigalpa learning market skills from his grandmother) inform dishes like potaje, a yellow lentil soup flavored with pork and red sofrito that’s on the menu. Girón handled much of the buildout himself—gutting red booths from a French bistro and commissioning vibrant murals hand-brushed by his childhood friend Mr. Emagin—and navigated a costly liquor-license process (about $400,000); J.P. Torres oversees a lime-inflected drink list that includes pisco sours, margaritas, unconventional options, and $5 homemade coquito shots. Neighbors praise the spot: “This place is so different from anything else in the area and feels refreshing and new,” says Rory Carrillo, while food blogger Madhurima Chakraborty observed, “The service was very intimate and [took] extra care to elaborate and suggest dishes.” Bayonne resident Denzyl Amankwah adds, “It’s a very bold move to change a menu daily, but I think that kind of ambitious culinary experience is going to pay off tremendously in Jersey City.” Also note the 15-minute commute to the World Trade Center for NYC residents." - Jess Eng

The Best Restaurants in Jersey City | Eater NY

"This Latin-leaning menu offers humble fare done well from Bryan Girón, who has cut his teeth at places like Barbuto, Bread and Salt, Eataly, and Shukette. Order from the chalkboard menu something like a pork and lentil stew, dolled up fries in the form of salchipapas, and an order like pollo chuco, fried chicken atop fried green bananas layered with handfuls of vegetables like red cabbage and herbs. The bar scene is lively on weekends as is the Wednesday night wine night. — MM" - Melissa McCart

The Best Dishes Eater NY Editors Ate This Week: December 2 | Eater NY

"A recently opened Honduran-leaning spot in Jersey City from brothers Bryan Girón and Christopher Jones, the restaurant felt packed and very local the night before Thanksgiving, with big tables lingering into after-dinner shots. The food is terrific in a maximalist way, with lots of sauces and garnishes; the chalkboard lists items like a great lentil and pork soup (intensely savory!) and an unusual fluke ceviche with peanut, avocado, and cancha. Don’t miss the chucos as a main — pollo is the go-to, stacked with fried chicken — but the reviewer had the skirt steak ($26), marinated in pear among other ingredients, stacked atop razor-thin fried bananas and garnished with cabbage, crema, and herbs from mint to scallions and dill, recalls of the brothers’ time at Shukette. — Melissa McCart, editor, Eater NY" - Eater Staff

Tanoreen, an Essential Palestinian Restaurant, Is Expanding | Eater NY

"A new Latin American restaurant and bar in the Paulus Hook neighborhood of Jersey City with Honduran roots, opened recently by Bryan Girón (who cooked at Barbuto, Shukette) and Christopher Jones (Eataly, Barbuto, Carbone, Shukette). The walk-in-only spot serves dishes like potage de chicharron (split pea soup) with pork ragu and baleadas (a variation on pupusas) — what they’re calling their "Honduran street food." - Emma Orlow

Rick Easton’s Grub Street Diet

"A Honduran pop-up run by Bryan Girón (a former employee of the bakery) offering homey dishes that introduced the speaker to Honduran cuisine: baleadas, coconut rice and beans, fried chicken with plantains and a cabbage accompaniment, a mixed seafood soup with coconut, and pinole with hibiscus to drink. The food impressed the speaker for its authenticity and everyday appeal — especially the baleadas and the pinole — filling a local gap for Honduran flavors." - Chris Crowley, Sarah Kilcoyne

Google
Everything about this place was amazing. Some of the best food I have ever had! There was a wrap (can't remember the name) that was almost like fusion between a gyro and a burrito. With fries inside. Garlic sauce and hot sauce on the side. Hands down one of the best things I have EVER eaten. The melon salad was also amazing so unique and refreshing ! Drinks were great and service as well. I will be back and I live in Canada.😂😂

Google
We enjoyed Perquin very much. It's definitely a great spot to come for a delicious craft cocktail (highly recommend the pisco sour) and a delicious tapas bite. The menu is pretty limited for a proper dinner spot but they have rotating specials you can view on their Instagram. I also really enjoy their outdoor seating on a beautiful day. Overall, this is a great option for a tapa and drink.

Google
Popped in here for lunch and loved it. Brian, the owner, was lovely and a great hang. We particularly loved the lentil soup with pork, taco arabe, and hibiscus drink. Will be back!

Google
I've been to Perquín multiple times now so I'm sharing a few photos from various experiences. The atmosphere is always great and the staff makes it a wonderful experience every time. The food is always AMAZING and the food and cocktail specials change so there's always something new to try. I'm a cocktail snob and their bartender, JP, Makes the absolute best cocktails and is very consistent! Definitely one of my go-to restaurants. A must try for sure.

Google
Food is good. The portion is a little small. The cocktail is really good. The atmosphere is a little noise but as a cocktail bar, it is acceptable.

Google
SUCH a good dining experience. The taco arabe and the steak baleada were incredible. Juicy and tender meat. Hibiscus juice was so good too with added spices like cinnamon, nutmeg, and cloves. Try their dessert too - their quince pastry was delicious. Brian the owner was so friendly and accommodating, cant wait to go back and try more things

Google
Probably one of the hottest spots in Jersey City. This is hands down some of the best food I had in this town. The portions are generous and the flavor of each dish left me excited for more. Can’t forget the amazing staff here, constantly checking on you. Didn’t feel ignored once. The menu is constantly rotating as they bring in fresh items, which means I’ll have to be back often.

Google
I wish I could rate this higher. Lord knows Jersey City needs more culinary diversity and "creative Honduras" certainly fits that bill. The space and the service are both colorful and fun. It's just....the actual food is lacking. It sounds like the chef serves whatever he feels like making, so the menu changes quite often. But the portions weren't very big for the prices, and a lot of the dishes were kind of lackluster in flavor--like they didn't know if they wanted to go all in on spices/seasonings or keep it light enough for American palates. The best of the bunch were the Ensalada and Pollo Chuco. Yes, I know...salad, really? But the dressing was tasty and the greens were very fresh. The Chuco, while small, was perfectly cooked. Unfortunately, the Jalea Mixta was a big disappointment: more breading than seafood and what seafood there was, was mostly squid rings. The Ceviche Jipijapa was okay, but again, small in portion and lacking in flavor. And our dessert of Fried Bananas with Honey again had too much breading and not enough flavor. It's early days though, so maybe they'll climb out of the growing pains slump.

Yelp
Came back again because there was more that I wanted to try on the menu and am very happy I did! Food was excellent once again. I tried the taco arabe and had a ham egg and cheese empanada. Both were delicious but I have to admit I preferred the empanada. The crust was light and crispy but it was also soft. The white sauce that came on the side was outstanding! There's more to try on the menu and I'll be back to give those items a try soon!

Yelp
This local spot offers some seriously delicious Honduran street food, and my first visit was fantastic. The restaurant has a wonderful feel--the decor is bright and colorful, which matches the vibrant flavors coming out of the kitchen. They have a small, focused menu, which I always appreciate as it usually means everything is prepared with care. I ordered the classic Steak Baleada with their house-made hot sauce, and it tasted amazing! So many rich, authentic flavors packed into one perfect dish. I also tried the Taco Árabe, and it was equally amazing! This meal was truly so good. I'm already looking forward to my next visit and can't wait to try their breakfast items!

Yelp
What a great spot in downtown Jersey City! Outdoor and indoor space, perfect for whatever you're feeling when you come in. The food is spectacular. The scallop ceviche is mouthwatering. The tacos are phenomenal. This is elevated Honduran food and it is well worth the visit and sometimes, the wait to be seated. Worth mentioning: the hot sauce! I can DRINK that. Fantastic on everything. I am so sad that they are closing, but we are keeping a close eye for what's next for the people behind this restaurant.

Yelp
Absolutely love Perquin. It was sad to see that they closed the old location, but I'm glad that they were able to reopen right across the street this fall. They've been a great addition to the Paulus Hook neighborhood the past year and serve up some delicious and creative Honduran bites. Owner Bryan and his staff are also incredibly warm and welcoming, so be sure to BYOB to the new location and try out the pollo a la brasa!

Yelp
I have been following Perquin since it opened and was excited to try it when I found myself in the area the other day. This was my first time trying Honduran food, and I have since discovered there are several well-rated Honduran restaurants in my area, so I have some new places to try! Our waiter was super knowledgeable about the menu and very friendly; I discovered they can modify a few of the dishes to suit vegetarians. I mentioned I needed to order fries to share with my dog, and our waiter recommended ordering unseasoned fries since I was going to give a few to the dog, which was so thoughtful! I had the sopa to start which was a bean soup with cilantro and spiced tortilla strips. It can be hard to find a vegetarian soup, so of course I had to order this! The soup was hearty and delicious, the spicy tortilla strips were a nice touch. For my main I had shrimp chucos, which has fried green banana chips, pickled red cabbage, and shrimp that are marinated in acid. This method of "cooking" shrimp is so delicious and keeps the shrimp really moist and flavorful. For drinks we had the porn star martini, which I found the juice in it to be a little too much by the end of the drink. We ate in the patio section with our dog and were really comfortable; the tables are new, and there are nice umbrellas at each table. Inside was more of a vibe, but the music was a bit loud for my taste (because I'm old).

Yelp
This is quickly becoming one of our favorite spot. Great service...Walter always takes care of us. They adjust happily for allergies and vegan diners. Most importantly the food and drinks are very good. Replaced the old bistro le source and made the space unique and fun. Menu changes often .... Difficult to find out what's available but if you stop in you will find something good!

Yelp
Small menu but everything is delicious. Just order one of everything, you'll be happy you did lol the drinks are great too and very strong.

Yelp
Specialty cocktails are fun. Bartender JT was super friendly. The inside is colorful with a beautiful mural on the back wall.

Yelp
Love the drinks and the food at Perquin!! I've been here for brunch and also after work for Happy Hour and this spot was good for both occasions! I really love their drinks especially, everything is seasonal and the menu changes often, but they really have a handle on how to make a good strong drinks. The food was also very good - I definitely recommend ordering a lot and sharing so that you can try a little bit of everything! We had good service both times we were there and I really like the space inside - very cozy and welcoming!

Yelp
Good food, great ambiance, hope it reemerges again soon. We stopped by on the day before it closed, and we ordered a smattering of their dishes. The beef empanadas and the ensalada were amongst our favorites, but everything we ordered was well-flavored and filling. A unique restaurant for the area, and hopefully it comes back soon.

Yelp
This place deserves more praise!! Simply WOW! I forgot to take pictures as we finished the food less than 10 min haah. We got the Baleadas with steak, ceviche, fries and Shrimp tacos. everything was a 5/5!! The service was awesome too; everyone was very nice and sweet. The ambiance felt authentic and fun. Amazing job of the owner and the chef!! I will add some pictures to my review when we are back in a week.

Yelp
Recently opened in Downtown Jersey City's Paulus Hook neighborhood. Fun, young, energetic vibe with friendly, welcoming staff. Honduran and other Latam based menu reflecting the season. Good selection of wines, beers and Latin inspired cocktails. I was seated immediately on a random Friday night but that may not last. This place could well be a hit.

Yelp
Great neighborhood spot serving big time flavors! Walking into the bright and vibrant restaurant, you'll immediately get a sense of the enjoyment you're going to experience. The variety of beautiful art decor on the walls plays the perfect predecessor for the equally unique and exciting flavors on both the cocktail and food menu. We came on an early Sunday afternoon and were able to grab seats at the bar. The bartender was a pleasure to have serving us as he took us through the background of the restaurant, chefs, and concept of their ever changing food and cocktail menus. The drink highlights included the elote old fashioned (made with corn whiskey, elote liqueur, and sprinkled with cotija cheese) and an amazing espresso martini which included a velvety smooth vanilla bean foam. The food was a latin moshpit, taking notes from various counties to build their eclectic menu: flavor packed pork papusas (made with rice flour instead of corn), pork maiz tetelas (made with a blue corn and giving the most satisfying crunch in each bite, and their baleadas filled with the freshest ingredients. Their menu literally changes everyday, so don't go looking for it to determine if you want to go or not. Walk by faith and not by sight straight through those doors and enjoy! Their future is bright for sure.

Yelp
WOW perquin did not disappoint and has some of the best flavor in every bite - every dish left us speechless. The rum punch (passion fruit based), hibiscus mojito, and pinarita were to die for. The carnitas tacos were some of the best we've ever had - packed with flavor. Every sauce was so simple yet delicious. We also had the salchipapa, empanadas, and ceviche. Rating this place a 5/5 - we loved the ambiance, food, cocktails, and the staff were amazing. There is no physical menu with menu options always changing - trust whatever the waiter and chef recommend. We will be back!!!!
google avatar

Joshua A.

Yelp
Amazing food. Cannot praise this enough. Salchipapa is to die for and I would've licked the basket clean if that was socially acceptable Service is phenomenal, owner is super nice Ambiance is great, decor is beautiful All around 10/10
google avatar

John C.

Yelp
Everything here was 10/10. Service was amazing (shoutout Walter). Drinks were tasty, and food was unreal. Got the salchipapa, ceviche, (had a peanut sauce that was really interesting/good), baleadas with skirt steak, carnitas taco special and finished it with the banana fritas. Bad news is that I live a stones throw away so I'll be packing on some lbs the next few months before summer

Yelp
Such a great experience here at Perquin! The food was so authentic and incredible. The chef, Brian knows what he is doing! Came out and introduced himself, so personable and kind. Had a wonderful experience with the servers, Walter and Andres who made their recommendations. Highly recommend. So nice to see such an ethnic delicious spot in Jersey City!

Jenna R.

Yelp
Delicious food, amazing drinks, good service, and fire music. Had a great dinner, and this is a great new restaurant.

Evelyn T.

Yelp
Went with high expectations based on reviews, food was average. Cocktails were good, I had the pisco sour!

Emily T.

Yelp
An absolute standout! From the welcoming atmosphere to the attentive, friendly staff, this place gets it right every time. The food is incredibly authentic and full of rich, bold flavors. The passion fruit margaritas are a personal favorite -- perfectly balanced and refreshing -- but everything on the menu is consistently excellent. I've visited several times, and each experience has been just as wonderful as the last. Highly recommend if you're looking for authentic flavors, great drinks, and genuine hospitality.

Patricia G.

Yelp
We went to this place a few months ago. We were excited to have a new Latin restaurant in the neighborhood. Unfortunately, we have not been back as the food was not as good as we would have liked. The flavors were not traditional Latin flavors and it was quite expensive.
google avatar

Lindsay L.

Yelp
I wish I could leave a higher review - we had my husbands 40th birthday here and it was so so wonderful. Bryan went above and beyond to make it a truly special evening, the food was out of this world. The staff so clearly enjoy working here and their joy is contagious. The drinks (and mocktails!) were a hit, we got a bunch of friends out of BK and NYC and I feel like Perquín really showed off why JC is so special. We can't wait to go back.

Nikolai M.

Yelp
High quality food and drinks. Nice ambience. fantastic outdoor patio. Simple while exquisite.

Kelly T.

Yelp
WE NEEDED THIS IN PAULUS HOOK! If you live in the area you know there's not a ton of variety when it comes to food. Perquin is such a nice addition. The food was amazing, the drinks are so good, and the staff is fantastic. Do yourself a favor and order the corn pancakes if you come for brunch!

Elizabeth M.

Yelp
Love Perquín! From the minute you walk in you feel the good vibes. Welcoming staff, good cocktails, fresh delicious food. What more can you ask for?
