The Best Things Eater Seattle’s Editor Ate in November | Eater Seattle

"This longtime farmers market stand now has a brick-and-mortar on Market, and that’s fantastic news for pie fans. I ordered a sampling of pies and loved how different they all were: The chocolate chess pie was incredibly rich and almost fudgy, the coconut was light and flaky, and the sour cherry might have been the best of the lot, with a tartness that contrasted really nicely with the buttery crust." - Harry Cheadle

Pie Bird Bakeshop - Review - Ballard - Seattle - The Infatuation

"When one pie shop closes, another one opens—even in the same building. Pie Bird Bakeshop, a farmers market favorite, has taken over the old Pie Bar space in Ballard. Pie variations include chocolate bourbon pecan, chicken pot pie, and sour cherry. There are also some extras like cinnamon rolls, crumbles, and pocket pies. We haven’t been here yet, but want you to know this spot exists." - Kayla Sager-Riley

Google
Great pie and friendly service. We split a number of pies amongst friends to sample a lot of flavors: banana cream, chocolate bourbon pecan, sour cherry, and passion fruit meringue. All of them were delicious, and the crowd favorite was the passion fruit meringue pie. The atmosphere is bright and open, and it’s fun to see the bakers at work through the large glass windows in the back.

Google
Cannot recommend this place enough. The passion fruit meringue pie had was the best pie I've ever had in my life. The interior is cozy, the people are friendly, and obviously the pies are a 10 out of 10 when it comes to deliciousness. Highly recommend checking it out if you're in the area, or even making a trip out of it.

Google
I visited this pie shop on opening day and was wowed! I love supporting small local businesses (especially female owned!) and eating pie, so this shop is my perfect vibe. The shop itself is very clean and adorable. It also has a nice bathroom which is always a plus. As a savory pie fan , I was absolutely floored by the chicken pot pie. The tomato ricotta quiche was also the best quiche I’ve ever had. I plan to be a regular!

Google
Pie bird is awesome!!! I'm obsessed with the aesthetic inside- beautiful interiors with a nod to Scandinavian style. And sweet details like how the pie is served on antique floral plates. Then there is the pie itself .... YUM. we tried 4 types - banana cream: fresh banana flavor, pillowy cream, lightly spiced. passion fruit meringue: tart and sweet, incredible passion fruit flavor. Chocolate bourbon pecan: rich and decadent. Sour cherry: beautiful flaky crust, gooey tart cherries, excellent. Extra perk- They had a toy basket for our two year old!

Google
I'm happy to see Pie Bird get their own brick and mortar. I'd never actually tried the pies at the farmers markets, but happened to be in the area. It's a nice space - I don't know how much renovation they had to do when Pie Bar left, but it's a bright and clean space. Both the chocolate bourbon pecan pie and coconut custard pie slices were excellent. I would recommend trying Pie Bird wholeheartedly!

Google
Delicious and lovely. I would order pie for a special occasion or come with a friend to enjoy a slice. Cute atmosphere. Pies and treats have good flavor and texture. I got 2 slices and 1 individual pie (more like a pie pocket type thing). Black/Blueberry was the best!!!

Google
The pocket pies from pie bird were always my favorite thing at the Ballard farmer's market and I was thrilled when they opened a store. The crust is phenomenal- if you have a friend who obsessively tests recipes and spent a few years perfecting pie crust- it tastes like that. Just picked up a root vegetable ricotta quiche and it was delicious. They often sell out, so go early if you want a selection, but whatever you get is going to be good.

Google
It’s been some time since I’ve last reviewed Pie Bird, and I’m happy to say that the evolution it has undergone does nothing to diminish the remarkable quality of the delivered baked experience. On the contrary, the full scope of vision behind Pie Bird comes into clarity with a delightful yet minimalist interior and accessories such as coffee to complement and elevate the pie. The passion curd pie I enjoyed on this occasion was unpretentious and well-executed, an enjoyable break from my day. That is to say, the pie, whether sweet or savory, is still very much the point; it comes across as a decidedly human enterprise in an era where gentrification is the norm. It humbly overdelivers- it dares to be a bright, almost dreamlike escape amidst a grey backdrop. That alone is worth taking notice of.

Yelp
Stopping by Pie Bird was a magical experience! The inside is clean, modern, and just beautiful. Plenty of seating has been created in such a small space. The staff was incredibly friendly! Between breaking down all the pies they had available, and offering to warm up the pot pie for me despite taking it to go was so appreciated! You can tell they love their job and are so proud of what they're making. I ended up getting the personal chicken pot pie and a slice of chocolate chess pie. Both were unbelievably delicious. The pot pie was bursting with spices, succulent chicken, and perfect bites of veggies. The crust was buttery and flakey -- just as you'd want from a pot pie! The chess pie was like a slightly undercooked brownie. Sooo, so good. Not at all what I expected, but even better. I have been telling my friends they have to stop by, and I can't wait to come back again! A real gem in downtown Ballard.

Yelp
I've always wanted to check out this new location so while I was on my daily dog walk with my pup, I stopped by. The ambience is extremely inviting the seating and the decor is perfect for the location. The customer service as soon as you walk in is immediately attentive, and the workers are extremely nice. As it was my first time they went over the different pies that they had available for the day. As far as food, there is a good amount of pie option from sweet and savory. I ordered the pumpkin pie and the flavor itself is very much on point. I just was not a fan of how soft the bite was. It could have been baked a little bit longer for my liking, but that's just a personal preference. The pie itself is still very flavorful. I will definitely be back . Plus, I promise the wonderful ladies today that I would be coming back to try the Pot Pie

Yelp
I visited Pie Bird for the first time today. The staff was very friendly and kindly explained everything available today. Interior is cute and would make a great place to hang out with a friend. I bought a slice of the pecan pie and the pumpkin pocket pie. I liked the pecan pie a lot. The pie crust was buttery and flakey and the gooey content of the pie tasted amazing. Pumpkin pocket pie is also good. It reminded me of eating a pumpkin pie and I felt like I got to savor the season from the pie. The pecan pie was great, but the presentation was a bit messy. It'll be prettier for sure if you get the entire pie, but when it's cut to a slice, it crumbles a lot and the slice looks like a slab. Something they could maybe work on? If you don't care how it looks then you should be fine.

Yelp
Oh my god. Buttery. Rich. Delicious. Get one. Get two. Get a whole pie. When a street market upgrades to a shop, you know they have something going right. They advertise their real butter crusts and you can seriously taste it. Rich and flakey. And the dude at the counter was the nicest person in the world in the clean open breezy shop. So I got the chess and the pecan pie (yes, both rich sugary southern staples, leave me alone). Yes I ate them both as soon as I got home (leave me alone, I'm living my best life here). Both were a high end version of gooey buttery richness you won't find at any other stores or pie shops around. I've tried. The topper was I bought a broccoli cheddar quiche out of guilt for my sweets and ate it the next morning. Just as good as the pies and also better than any other. Most places have tiny shredded broccoli and 90% egg. I swear this was 60% broccoli and 15% crust with a little egg holding it together. Whole pieces of broccoli. At first I wasn't so sure because the texture was different, but I'm CRAVING it still a month later. This is the kind of uniqueness we need in foods, just awesome ingredients and solid craft without random gotcha ingredients. Thank you. Save me a piece plz.

Yelp
I am very late to the party with regards to Pie Bird Bakeshop, a popular business at farmers markets. However, they opened their well situated brick and mortar on Market in Seattle's Ballard neighborhood. I stopped by on 8/23/25; the day before was their soft opening. I had intended to just order a slice of Boozy Peach, but also purchased two blueberry hand pies. The latter were well received by its recipients. Flavors seem to follow the seasonal abundance. Nice bright interior with ample indoor seating. This indie business is truly poised for continued success.

Yelp
Find me another pie place anywhere with pies that beat Pie Bird. The fillings are extremely full of flavor without being too sweet. And the crust...I could just sit and eat the crust on its own. Very flakey and buttery. I've been getting Pie Bird pies at the farmer's market in the University District of Seattle since she started baking them! The new shop the owner/baker has opened in Ballard is clean and aesthetic. Highly recommend.

Yelp
Had the maple pecan and strawberry nectarine at the farmers market. Excellent crust and filling. Well formed without being overcooked. Pie crust is great and adds to the experience. Not bitter at all or overly buttery.

Eliza B.

Yelp
Such a gem in Ballard! Hannah, the owner, is so warm and welcoming and from Seattle. She has been selling her well known pies at the farmer markets and finally opened a shop! I brought my three kids and they loved it. amazing pies with perfectly flaky crusts and delicious fillings. Cozy vibe, family-friendly, and we'll definitely be back! Happy to support a local shop.

Dawn P.

Yelp
Hands down the loveliest pie crust I've ever had - flaky and tender and the savory pie was crammed with juicy chicken and lovely veggies with kale and green beans. It's a tidy, bright space with prompt, friendly service and I hope it sticks around!

Yelp
It is incredibly difficult to find good cake or good pie. Most everything we have tried at Pie Bird Bakeshop has been amazing. Pie Bird Bakeshop is the one bakery I will return to purchase pie, especially when I am too lazy to bake one myself. Premium ingredients are used, including European-style butter and organic, locally sourced, farm fresh fruits. We tend to stick with our favorites each time we purchase a pie. Our favorite of what we have had is the Banana Cream: delicious banana custard, fresh bananas, and a surprise crumble. Another favorite is the Bourbon Chocolate Pecan Pie: great balance of the smooth, sweetness of the chocolate and crunch of the slightly salty pecan. The Horchata Chess: decadent and comforting. The Black Bottom Pumpkin: we loved the pairing of chocolate and pumpkin, but the pumpkin was more spice-forward. Unfortunately, I am knocking a star for the one lady with the long brown hair with an attitude. She sells at the farmers' market, where every time I buy from her, she has this cold, condescending attitude. It would be one thing if that is how she normally interacts with people, but in one instance, she was incredibly friendly and helpful to the person in front of me, describing the pie itself, how long it can sit on the counter before having to be refrigerated, and how long it will hold in the refrigerator, etc. She provided none of that to me, ever. She does not have a friendly tone with me, as if it pains her to wish me a nice day. Everyone else who sells the pies is warm and welcoming, including owner, Hannah Jacobsen herself. One bad apple ruins the entire pie; the same applies to any business. Pie Bird Bakeshop is currently available at the farmers' markets, but we hope Ms. Jacobsen will have a brick-and-mortar bakery in the future. Ms. Jacobsen is an incredibly-skilled baker and offers many unique flavors. We look forward to her next creations.

Yelp
Pie Bird is a phenomenal shop, baking the best pies anywhere. You can expect familiar favorites like Apple, Pumpkin, Berry, and stone fruit pies.... and Pie Bird also makes flavors you never knew you wanted like Horchata, or Chocolate Cress. Hand pies make a perfect snack, or tasty treat, too. Pie Bird is easy to pickup at local farmers markets, or join Pie Club for monthly delivery of the best baked goods. I'll just close by saying that no one should miss out.

Yelp
Pie Bird is the main reason I go to the farmers market! Their pie crust is perfectly flaky, especially on their pocket pies. They always have delicious in season flavors that are the perfect balance of sweetness. Would definitely recommend!!

Sandra F.

Yelp
Delicious pies, great atmosphere, friendly staff, perfect location! Clean and cozy. Go as soon as you can!

Stephanie S.

Yelp
I am obsessed, truly, with Pie Bird. The Ballard Farmers Market is an hour out from me but I'll make the trip there as often as possible. I'm even a part of the Pie Club and have them deliver to my husband's office on Fridays because they don't deliver down to me. I think I even dragged my babies to South Lake Union when they had a pop up. ¯\_(ツ)_/¯ I've made my way to almost every market they go to just to get my fix. The pocket pies freeze nicely so I buy a bunch and have a nice stock. I love that all of their fruit is purchased locally and that everything is seasonal. The ingredients are also super quality and you can tell. Hannah is great to work with when you need help or support. My favorite pies? Any of the berry pies, the horchata chess, pumpkin (in any variety), the pear crumble, bitter chocolate... I don't think I've had a bad pie.

Yelp
Her quiches are TO DIE FOR. Best crust I've ever had, and the texture of the custard is so perfect. She does amazing rotating flavors. I've also had her cherry pie and it was delicious. Yes her stuff is on the pricier side, but yes it is worth it.

Yelp
If there were a sixth star, Pie Bird Bake Shop would deserve a 7th. As monthly pie club members, we've had the privilege of tasting our way through their lineup--and let me tell you, this isn't just pie, it's a life-changing experience wrapped in golden, flaky perfection. Every month, our taste buds are treated to new masterpieces. From classic apple that tastes like your grandma's warm hug (to her favorite grandchild.. yes she has one) to creative flavors that make you question how you've lived without them (boozy peach, I'm looking at you), Pie Bird nails it every single time. The crust is always buttery and perfectly crisp, the fillings are generous and balanced, and life feels tolerable for a short moment. Our only complaint? That we have to wait 30 whole days for our next pie club delivery. If you're on the fence, just go visit the U district or Ballard farmers markets. You'll thank me later--probably with your pie hole full.

Yelp
Some of the best pies ever!! The crust is flakey and delicious, and the flavors often rotate based on the season. My absolute favorite is the bourbon chocolate pecan, and also love the pumpkins! Pocket pies are great, the cheesecakes, you really can't go wrong. You can get good-sized slices at their farmers market stand, to try lots of different flavors!!

Yelp
The best pies I've ever had in my life! Hannah uses the freshest, high quality ingredients that truly make her pies delectable. Starting with the buttery, flaky crust that melts in your mouth to the classic and creative flavor combinations, these pies are truly one of a kind. My favorite pies are her marionberry and chocolate bourbon pecan, but would love to try more flavors the next time I'm in town. Last, but not least, Hannah is the kindest soul you will ever meet and she makes every pie with a lot of love, thought, and care

Linda C.

Yelp
There's nothing like PieBird! The buttery crust, and the fresh, local produce that is used creates unbelievable flavors! We have been a pie of the month member from the beginning and always eagerly await not just the pie, but quiche and our favorite pocket pies! Also, if you ever have a chance to get her epic chicken pot pie you will be changed forever- not your grandma's pot pie!!! #bigfan

Andrew S.

Yelp
Two words... pocket pies! They are unreal and feel like a high class healthier pop tart - they sooooo good. Every time I am in town from NYC I try to get one. The quiches and full size pies are amazing too plus super friendly people.

Yelp
Pie Bird makes THE BEST pies in Seattle. I've been a customer for at least five years now and I love every pie I've ever tried. I love that you can buy pies by the slice at Seattle farmer's markets and it's become a family tradition to buy Pie Bird pies at Thanksgiving and Christmas. Hannah and her staff are so kind and approachable and her product is impeccable. The crusts are decadent and I appreciate that her fillings are never too sweet! While I love all her pies, I think her fruit pies are truly standouts. I cannot recommend Pie Bird enough!

Lori D.

Yelp
I've been lucky for five years to have been eating Hannah's delicious pies. My mom was the best pie baker in the world and Hannah comes within inches of her pies. I purchase a whole pie from Piebird and treat myself to a slice most days. Fortunately I can get my fix year round at two Farmers Markets. So happy to have found Piebird!

Erika F.

Yelp
Every pie is delicious and made of quality, seasonal ingredients. Hannah comes up with new ideas for flavors and designs all the time, while keeping the quality and crust consistent. So good!

Liz J.

Yelp
These Pie Bird Pies are my very favorite!! The crusts are the best I've ever had! I think it's the European butter! These pies and your company are truly a gift to the Northwest! Thank you Pie Bird!!!!

Maxine D.

Yelp
Best pies in Seattle. The crust is way better than any other place. Flaky, buttery, and the tiniest hint of salt. Every single pie they make (and they rotate every month) is incredible. Their pie pockets are also a favorite of mine. Get them at the farmers market!

Andria Q.

Yelp
We received the monthly Pie Club as a gift one Christmas. It was so fun to get a different pie delivered to our door each month! We loved it so much we signed up for a 2nd year. Every pie was a different flavor over 2 years and they all were delicious!!

Kim R.

Yelp
Pie Bird Bakeshop delivers the most delicious pies! The crust is the best we've ever had and the variety to choose from is vast and all are so tasty.

Manda S.

Yelp
My favorite pie in Seattle! Or maybe ever. Love visiting at the farmers markets and trying different flavors. Have never had anything that was not delicious but my favorite is the bittersweet chocolate chess- so fudgy!

Paul P.

Yelp
Simply put, Pie Bird pies are the best in Seattle. Every flavor has been delicious and whenever my daughters visit they ask for pie. Plus if you pick up a pie, especially the pumpkin with a dark chocolate bottom, you'll be a hit at a holiday party. Top it off, the owner is a wonderful person. Buy one! You'll end up getting more.

Tyler L.

Yelp
Best pies I've ever had hands down. Both the classics and originals are amazing, Horchata chess is my favorite. The owner Hannah is just as sweet as her pies !

Brendan W.

Yelp
Best pies in Seattle! We preordered for dessert at our wedding and it was a huge hit. Apple and marionberry were our favorites. Would 10/10 recommend.
