We had a terrific dinner! Jet lagged from 10 hours of flying, we were exhausted before the standard 7pm restaurant opening time, but a woman tending the place let her dog out, we chatted, and she invited us in, stressing that it was 7 minutes before opening. My wife used the restroom and worried that "nobody is in the kitchen," though the woman had been tending a wood fired pizza oven. Promptly at 7, people started showing up to run the place, and within seconds out appetizer was served, and shortly thereafter the pizzas were in front of us. Before we left, the place was packed (and from what we could tell, the vast majority were local folks who placed their orders as they walked in the door - orally, to the owner/chef, who was ably assisted by a talented, unassuming and very attentive crew. Oh, and the house wine (red, in our case) was the best "house wine" I ever recall tasting. The woman recommended it after I told her what I was looking for from among three wines that cost three times as much. A try house wine, it did not even carry a brand name.
These folks are the real deal. They need no gimmicks to draw tourists in. They could probably survive just fine by word of mouth from the locals. And they were so reasonably priced that my wife insisted we go over the bill, certain that they had undercharged us by mistake.
They offer a couple of fried pizzas, and the one we had was delicious, and did not taste greasy. We also had a wood fired "4 Seasons," which is the best wood fired pizza I have ever had. The crust was a wonderful blend of slight crunchiness at the browned edges and incredible moistness in the fully cooked remainder.
They are true artisans.
