Josh Henderson Halts Plans for Poulet Galore in Ballard - Eater Seattle
"Renowned chef and restaurateur Josh Henderson tells Eater Seattle that he’s put the brakes on plans to open up a new outpost for his former walk-up rotisserie chicken window, Poulet Galore. He originally targeted the former Volterra space on Ballard Avenue for the restaurant, which had been operating as a farmers market stand around town this summer." - Gabe Guarente
Josh Henderson’s Poulet Galore Readies Its Revival In Ballard - Eater Seattle
"Poulet Galore — the walk-up lunch window that served well-brined chicken in South Lake Union before closing in 2017 — is going to re-open up in Ballard as a sit-down restaurant in August. The spot from renowned Seattle chef and restauranteur Josh Henderson originally captured attention for its moist rotisserie chicken platters and sandwiches on griddled sourdough bread, but it closed at the same time as Henderson’s other two restaurants (Vestal and Cantine) in the same Amazon-heavy area shut down. Henderson hopes to have better luck in Ballard with a bigger space — including a patio — and extended hours." - Gabe Guarente
It was very good. I wish they had more selections of broth

The food is delicious and wholesome. Tough to go wrong with anything on the menu. Wish this place was open for the evening as there's a decent bar and lounge too. Hoping it is this summer as folks discover it and are out later.

Great Take out Roast Chicken. Comes in 5 available different sauces. Fried chicken Friday (sandwich) is delicious. Try the roasted potatoes.

I had the chicken sandwich with some pasta salad. Both items were very, very delicious and I would definitely recommend it to anyone.
