"Poulet Galore — the walk-up lunch window that served well-brined chicken in South Lake Union before closing in 2017 — is going to re-open up in Ballard as a sit-down restaurant in August. The spot from renowned Seattle chef and restauranteur Josh Henderson originally captured attention for its moist rotisserie chicken platters and sandwiches on griddled sourdough bread, but it closed at the same time as Henderson’s other two restaurants (Vestal and Cantine) in the same Amazon-heavy area shut down.
