21 Great Paris Restaurants That Are Actually Open On Mondays - Paris - The Infatuation

"Pristine is a bingo card of small plate restaurant tropes, featuring chummy service, natural wines, and dim lighting. But this spot in the 9th stands out with its daily changing, creative plant-driven dishes and stellar pacing, allowing you to linger over impeccable bites of mushroom duxelles piled into crisp pastry without ever having to hold the basket of the excellent bread on your knees. Plants dominate the ever-changing seasonal menu, with options that range from approachable, like an open squash raviolo, to out-there, such as celerisotto, a rice-free play co-starring salted trout seasoned with bright sumac. The free house butter is out of this world: smoked, whipped, and served in a generous room temperature dollop on a flea market plate any French elder would be proud to own." - emily monaco

The Best Restaurants in Paris, According to a French Food Expert | Eater

"The produce-centered cooking of chef Jérémy Grosdidier (ex Jules Verne et Plaza Athénée) showcases an intriguing new trend in Paris, which is the development of plant-based bistro cooking. What this means is dishes that achieve the umami-rich flavors of traditional French bistro favorites like boeuf bourguignon but using plants, grains, mushrooms, and everything vegetable instead of meat. Recent examples include a mushroom tart with roasted hazelnuts, risotto with roasted Jerusalem artichokes, and roasted butternut squash with poached egg and a bay-leaf infused sauce mousseline. Some meat and fish still make the menu, including a luscious cabbage stuffed with turnips and chicken in chicken-and-mustard jus. Owner Michelle Primc channeled the time she spent working as a barista in New York with a winning décor of exposed brick walls, terrazzo tables, and industrial lamps. Located in the 9th arrondissement. Best for: A bistro meal for plant-based diners." - Alexander Lobrano

My husband and I visited a week ago, and are still talking about the plates of beautiful whipped butter, delicious dishes, incredible Pet Nat (and other fabulous wine of course) and impeccable service with top notch vibes. I am a celiac with other dietary restrictions as well, who struggles at most restaurants to find even a thing to eat. Pristine were not only already aware of my restrictions from reading the booking when we walked in the door, but they showed me everything I could safely eat, which happened to be almost everything on the menu. AND they gave us a sick Pokémon card when we left, because good vibes. We loved them, and you will too.

Vegetarian cooking is often the most creative—and Pristine (a seasonal ingredient-led place) is a prime example of this. Neatly inventive takes on French-style food, with an autumnal focus, bringing out the famous flavours you’d expect from a traditional French bistro but without any meat. The service, too, was fab. And it’s fantastic value for money. Trust me: go here! :)

Trendy spot with modern French food, all vegetarian! It's more of a tapas bar with small dishes and a wide selection of wine and beverages. Lots of reminiscences of traditional French cooking techniques, but with vegetables and everything was very tasty, and that's speaking from a meat-lover myself. Reasonable prices too. Good place to chill with friends. Staff speaks great English. I love the mushroom pie, babaganoush with leek, & the beetroots dishes. I would sample everything here. I hope the chef comes up with new flavors/dishes and add more in the future with the rotations.

Highly recommend. Creative dishes with a unique spin within a comfortable casual setting. Plates are small, good for sharing. Most items are under 20 euros, including wine by the glass.

Incredible, how the food was average. Normally you expect from vegetarian based restaurants to be driven by taste and really over the top, in terms of quality and innovation, but the 5 plates we’ve tasted were so average, that not bragging, I would do so much tastier at home (words of my companion) hopefully they forgot about our last plate. The only positive point was the bread & butter- amazing, full of texture and taste. Shame, because the place itself is really intimate, perfect for a date night dinner. Only if the food was better.

This was my favourite 3-course meal of a few in Paris. I’m pregnant and found other places difficult to cater to my restrictions. Pristine even had an alcohol-free sparkling wine, which was a treat. Great service, cool atmosphere. We enjoyed sitting upstairs and seeing the chefs at work. The whipped smoked butter was incredible!!! We also enjoyed the mushroom tart and ice cream sandwich. Definitely best all-around dining experience of our trip.

We came to this restaurant to celebrate with our friends, and since most of our group is vegan or vegetarian, we chose this place accordingly. The wine was very good and high quality, but unfortunately the food despite all the hype was very average and quite bland. We all agreed that the vegetable based dishes were so simple that we could easily have prepared better meals at home, so the experience felt far from worth the price. The biggest issue was the portion size. Even as a small-framed woman who finished the entire menu, I was still hungry afterward. After paying over 300€, all of us were still hungry (and hangry) and ended up going to another bistro for fries. When we tried to share our feedback, the waitress did not take our criticism well at all, which left us even more disappointed.

Like most French restaurants, the quality of food is excellent. They are bursting with different flavors. We thoroughly enjoyed the small menu with small shareable plates. We had the asparagus, artichoke, tuna tartare, "vollaile/bird", and carrots; however, it was on the pricier end for a meal. The staff are friendly but note that if one is seated in the basement, there are some fruit flies which can be a little annoying.
