"Pristine is a bingo card of small plate restaurant tropes, featuring chummy service, natural wines, and dim lighting. But this spot in the 9th stands out with its daily changing, creative plant-driven dishes and stellar pacing, allowing you to linger over impeccable bites of mushroom duxelles piled into crisp pastry without ever having to hold the basket of the excellent bread on your knees. Plants dominate the ever-changing seasonal menu, with options that range from approachable, like an open squash raviolo, to out-there, such as celerisotto, a rice-free play co-starring salted trout seasoned with bright sumac.
