Ramen Break Beats - Review - Meguro - Tokyo - The Infatuation

"We don’t say this lightly, but this hidden, eight-seat Meguro shop makes the best ramen we’ve ever had. They offer a variety of options, but the shoyu and shio bowls are standouts. Thin noodles are neatly draped into the bowl and swim in a dark, umami-packed shoyu broth that glistens gold. Each topping flexes expertise like the bundle of fried enoki mushrooms, every tangled stalk crisped to the same level. Take the two pork-filled wontons, for example: their noodle skins are so soft they partially dissolve with the first bite. Before opening Ramen Break Beats, the chef was a hip-hop DJ, and you can tell listening to the mix of ’90s classics bumping through the speakers. Unlike other popular ramen places, there are no snaking lines because you’ll need a reservation. They book up quickly, so be sure to plan ahead." - Kiera Wright-Ruiz

"The chef was a DJ in a former life, and the technique he applied in that calling, break beats, informs both the name of the restaurant and the music piped through the dining room. The signature dish is soy-sauce ramen, which owes its beautiful presentation and clear soup to careful preparation of the noodles. The purity of the broth delights the palate from the first mouthful. With rhythmic tempo, you’ll reel in the noodles and drink every drop of soup before you know it. A beat-driven bowl that hit big in Meguro." - Michelin Inspector

Highly popular on social media, this ramen shop requires some extra steps, but please check their website for the latest information. When we went, a pre-registration is required. You have to come to this ramen shop past 9am to find a registration sheet. You'll have to find open time slots (per person). We arrived around 9:30 and the earliest we were able to reserve was 1:15. Also, this place is a good walk from the station so take that into consideration. I ordered their Ultimate Shoyu Ramen, which you can really see the extra care they consider. The soup is very clear, but extremely flavorful, perfect combination with the noodles. The ultimate package includes three meat toppings, pork, duck and chicken, all juicy and bringing out their unique characteristics. The flavored egg was the perfect dessert for this fabulous dish! Very jealous of people living in the neighborhood, not sure if I am willing to make the same commitment, but no doubt a fantastic ramen that deserves the top 100 recognition! Crowd Size: Very High (need pre-registration) Payment Method: PayPay

I was completely blown away by Ramen Break Beats. I hadn’t planned to write a review—not because I had nothing to say, but because I didn’t know where to begin. The ramen was that good. It wasn’t until I had lunch at another Michelin-listed ramen shop that I understood exactly what sets Ramen Break Beats apart. That’s when it became clear why and how this place is my all-time favorite. I usually have chicken-based white broth ramen, and Break Beats’ tanrei-style chicken soup was next-level. It tasted like every ounce of essence and nutrition had been drawn from the chicken with nothing wasted. The result was pure, concentrated flavour in every spoonful. What makes Break Beats special is its refusal to “optimise.” Drinking the soup, you’ll realise the depth of the broth. The chef doesn’t care how efficiently soup can be made or how to replicate results with shortcuts. The shop commits fully to the most uncompromising, labour-intensive way of doing things—pushing every step to the extreme. Extremely delicious. Extremely memorable.

Ramen Break Beats is not closely located to the train station but with Google Map and good mobile network, it is quite easy to navigate your ways through the alleys and turns of the neighborhood. A public bath house is located right next door so you can also consider arriving earlier and refresh yourself first before enjoying this sumptuous ramen. Reservation is a must, walk-ins are not accepted. A very balanced and poignant soup, and the pork and chicken chasius are superb. The only downside is the location of my seat - I sat at the counter with my back facing the kitchen and thus unfortunately I was unable to watch the chef create his masterpiece.

Ramen with high quality ingredients. The location is a bit far so might suggest you to just take cab from nearby stations. Must reserve before visiting, the reservation will be opened 7 days before at 9pm japan time.

Google
The most beautifully plated ramen I have ever eaten. Everything in the bowl is carefully curated and executed, from broth, various charsiew and wonton. For noodles, I like mine harder, but I am sure most would already find it to be perfect. Is this possibly the best bowl of ramen in the world? I don't know, but at least I am sure it is definitely a strong contender!

Google
Beautiful ramen with variety of meat toppings. I had the special shoyu ramen, the soup was clean, delicious. Tasted as it looks. There are seasonal specials, the price 2025 New Year special was a black truffle mazesoba, my partner ordered this - it was and delicious. Service was nice but you need to wait outside; so the flow is reserve online > show up and wait outside > go in to order food using the machine > wait outside > finally go in to eat.

No doubt why this is one of Tokyo’s best ramen shops. Came here a few years and had a killer bowls of Shoyu and finally returned to try the Shio. This is a richer bowl of Shio because of the generous topping of chicken oil, but enjoyable through and through. All of the toppings are top quality and the an attention to detail is evident in the noodles, broth and presentation. Each bowl that I saw go out made my mouth water. As a fan of 90s hip-hop, this shop has hands down the best playlist of any ramen shop I’ve ever visited!
