"We don’t say this lightly, but this hidden, eight-seat Meguro shop makes the best ramen we’ve ever had. They offer a variety of options, but the shoyu and shio bowls are standouts. Thin noodles are neatly draped into the bowl and swim in a dark, umami-packed shoyu broth that glistens gold. Each topping flexes expertise like the bundle of fried enoki mushrooms, every tangled stalk crisped to the same level. Take the two pork-filled wontons, for example: their noodle skins are so soft they partially dissolve with the first bite. Before opening Ramen Break Beats, the chef was a hip-hop DJ, and you can tell listening to the mix of ’90s classics bumping through the speakers.
