"Matilda is the hotel restaurant at The Henson, a 16-room inn that charges $389 a night for rooms engineered to look good in your end-of-summer film dump. It comes to the Catskills from the team behind Wildair in NYC, and they also run Day June, a fancy diner around the corner. While everything is technically spot-on and tastes good, the flavor combinations don’t land as well at Matilda as they do at their other restaurants—it's almost like they fed the Wildair menu to AI and told it to spit out an Upstate version. Still, it’s worth checking out for the lush mountain views, or to have wine and delicate, vegetable-forward small plates with your creative director friend who says Phoenicia Diner is “overrated now.” It’s a lot quieter here than in Hudson or Woodstock, making it perfect for a romantic date or getaway. Golden hour light streams into the dining room from the garden windows, and soft fabric lights and a giant limewashed fireplace lend a nice modern touch to the historic feel of exposed wooden beams. If you’re coming with a larger group, know that you’re going to have to put in multiple orders of the dainty small plates. Unless you want to Lady and the Tramp dauphine potatoes the size of an egg with your homies. Food Rundown Dauphine Potatoes Airy pockets of fluffy potatoes would be a decadent snack on their own. But the bright green basil leaves sandwiched between the piping hot potato pastry and a translucent sheet of fatty prosciutto takes these to another level. They are rich enough that you’ll feel satisfied after just a few bites, which works out great because your order only comes with three and they’re the size and shape of a foam football stress toy. Roasted Onions This is one of the simpler dishes. And by that, we mean that it’s a plate of 11 onion slices in a shallow pool of bonito broth with crisped-up sourdough shards. It makes for a very tasty side to pair with your larger mains like the slow-grilled chicken or striploin. photo credit: Matilda Green Asparagus We wanted to like this asparagus dish, where bite-sized pieces of vegetables are arranged into teeny Lincoln Log cabins with curled fiddleheads and garlicky green onions. But for $18, we wish that we got more than three stalks of asparagus. photo credit: The Henson Confit Tuna Belly Imagine you left a tuna salad sandwich in your backpack before stuffing it with a laptop and a Neapolitan Novels boxed set. Now imagine pulling it out to discover that instead of a mushy, wet mess, it was a delicate stack of paper-thin sumac crackers, fatty confit tuna belly, and preserved lemon dijonnaise. It’s one of the better dishes here, but the combination of funky ingredients still leaves us scratching our heads a bit. Steelhead Trout Trout in the Catskills isn’t groundbreaking, but it still feels fresh and interesting here, with a deep onyx-colored nori puree and tender, poached fish. The crunchy sea beans on top also add a great touch of salinity. Strawberry and Potato Do we actually detect roasted potatoes in this fluffy mousse? Not really, but it’s a very nice dessert with smooth ribbons of olive oil and strawberry jams. Creative and delicious menu in a beautifully decorated interior makes this a dining experience you won't soon forget. The dishes are made to be shareable and you can't go wrong with anything you order. The taste is just amazing! The sourdough bread and butter is a great way to start your meal - warm and inviting. We had the dauphine potatoes as well as the lentil dish with chanterelles, and the huge garden salad in a light lemony almond vinaigrette. Our waitress Amanda told us their herbs are grown in the garden, and you could really taste the freshness of the ingredients. The Amish chicken is the best chicken dish I've ever eaten - so moist and juicy. We finished our meal with the chocolate mousse and lemon tart and can't wait to return. Creative cocktail menu and extensive wine selection, both by the glass and bottle. Very attentive wait staff and plenty of parking. Reservations recommended.

10/10 food. If you thought salad was an appetizer you’d be right, but the cashew salad here was a MOMENT and mind blowing. My main trout was cooked to buttery perfection and then I had a chocolate mousse for dessert that had textures I’ve never tasted anywhere else. The cocktails are also whimsical and fun. Great selection of wines as well. Incredibly thoughtful menu and chefs who cook with great care. The waitstaff are also so kind and made sure I was well taken care of. Happy eating.

Came here to celebrate with family and friends and was very impressed with the food and the ambience! The food was perfectly prepared and the servings weren’t too small nor overwhelming. We ended up ordering a bunch of stuff for the table and sharing for variety. They offered me non alcoholic wine that they made being that I’m pregnant- which was a very nice gesture. The desserts were so good!!!! Particularly the chocolate moose with all of its mixed textures! We enjoyed checking out the gardens afterwards. 10/10- will be back!

This is a fantastic restaurant. If you're reading reviews because you're on the fence about it, just book a table and prepare to enjoy yourself. The cocktail program is fancy and fun. They're using carbonation in several of their drinks, and the results are unique and delightful. We loved the Mangoes Into A Bar and the Bird In Hand. Gorgeous, delicious cocktails. The bar area itself is upscale and cozy, a perfect place to just have a drink or even a more casual dinner. Note: They have a bar menu with different food selections than they offer in the restaurant. And if weather permits, grab a drink and walk around in the beautiful gardens out back. All the food we had was delicious. The sourdough bread is melt-in-your-mouth magic. The dauphine potatoes are not to be missed. The Amish chicken is incredibly juicy and perfectly cooked. We also loved the sundae. Everything was just perfect. We interacted with several employees, primarily Pat the bartender, and Teak was our server. They were both super friendly, helpful, and efficient. We truly loved everything about our experience here, and we will certainly be back. Can't recommend Matilda enough.

INCREDIBLE experience. The gardens are gorgeous, the interior of the restaurant is stunning. The food was insanely good. Hard to pick a favorite dish but I loved the tuna belly and the dauphine potatoes. Great cocktails and natural wine. Impeccable, warm service. They have an open kitchen so you can see the chefs in action. A+ hospitality. I can't recommend enough. Thank you team.

Our dinner at Matilda was the highlight of our trip to the Catskills area. The space itself was beautifully and uniquely decorated, the service was friendly, helpful and accommodating, and the food was nothing short of delicious. Our favorites (aside from the delicious and inventive cocktails) included the dauphine potatoes, the wood grilled oysters, and the Amish golden chicken. We can't wait to return, and hopefully even stay at the inn that it belongs to. A must try if you're in the area!

I was skeptical about a 4.9 restaurant out in the middle of nowhere but the food and service far exceeded my expectations. We went for my boyfriend’s bday and I had earlier asked for a tasting menu. They accommodated with no problems and the food was just as amazing!

Exceptional and gorgeous mid-century style restaurant in the Catskills, and one of the only ones open on a Wednesday evening! I've had the pleasure and privilege of dining at some of the most reputable establishments in NYC and LA, and this ranks in the top tier. The flavors were intricate yet subtle, and I loved that it was vegetable forward. My "Not a Negroni" was the best Negroni I've had, hands down. I wasn't sure how the Rum and Pineapple Amaro would work together, but they were exquisite compliments. The homemade sourdough and butter came out hot and crispy on the outside, soft on the inside. It was hard to resist ordering more. A simple salad of lettuces, cucumber, cheese and light dressing blew my mind -- perfect for summer. I got the dauphine potatoes, which were like potato croquettes, and the addition of prosciutto made them a hearty and filling dish. The only miss for me were the desserts -- the flavor of the lemon tart was excellent but there was a jello-like encasing that seemed out of place and unnecessary. The mousse also had these strange jello-like pieces in the cream, which didn't really work for me. Next time, I would get the sundae. Our server, Amanda, was friendly and attentive without being overly watchful, and when she got busy, the host came over and helped us order drinks. This place is a gem, and I look forward to returning.

Wasn't wow-ed by the size of the menu, or the hospitality at greeting, but holy sht, things changed for the better as the meal progressed. The waitress, Teak (good luck with your surgery homegirl) turned out to be awesome. Every recommendation was perfect, I highly recommend the half deboned chicken and the lentils. Do not skip dessert. Order everything on the menu. One thing I didn't love was the fully dressed oysters with frozen toppings - I know it's a thing, just not my cup of tea. An absolutely beautiful location which I'll happily come back to.

The best place you can eat dinner probably within at least a 50 mile radius, maybe even 100 miles. This is the restaurant in the brand new The Henson hotel in the Catskills, from chefs Jeremiah Stone and Fabian von hauske Valtierra of Wildair and Contra in NYC. It's a gorgeous dining room with a nice bar room and also lots of patio seating in the enormous backyard. The food is similar to what you would expect from their other restaurants, with some amazing new dishes like the Cannelloni. Of course get all of the desserts, including an incredible Strawberry granita and a great rendition of Chocolate Mousse with Hazelnuts. This restaurant is good enough of a draw to pick The Henson as a place to stay next time you're upstate.

Amazing food, service, and ambiance. Although some of the other customers were loud, it was at no fault of the restaurant and it is the best restaurant in the Catskills hands down. Such a hidden gem, it is located in a boutique hotel called the Henson. It is a very nice farm-to-table menu that boasts seasonal changes. The portions aren't the biggest but they were enough for my boyfriend and I (Both active, military) to feel full after a hard day of skiing. I appreciate their setting of table prior to each course, very classy and thoughtful. The server made great recommendations on the menu and helped us curate our meal based on our budget. The bar also looked cute and intimate. The French press coffee service at the end of the meal was also very cute and with beans from one of my favorite roasters.

Amazing amazing amazing!! Hands down the best restaurant we have been to in upstate new york. We are in Windham for a long weekend getaway at a hotel nearby and came here during our first night and were blasted away by the richness of all of the flavors. The bread and butter is very special and so is the amish chicken with its super impressive hearty sauce. Cocktails are amazing, the dessert also (we had the sundae). All around wonderful restaurant with excellent decoration too. Our server was amazing, wonderfully helpful with our picks. Don't miss this gem of a place!

A pricey spot especially compared to other businesses in the area but the service, ambience, cocktails and food are far and away the nicest. The drinks are inventive and delicious and presentation is beautiful. Big fan!

The best restaurant in the Catskills and one of my favorite meals of recent memory. From NYC's Wildair/Contra chefs Fabian von Hauske and Jeremiah Stone, Matilda is equally as delicious and creative and makes amazing use of the local ingredients. Highly recommend eating the full bar and main menu: tuna belly confit, dauphine potatoes, chickpea fritters, wagyu steak and all the desserts (especially the mousse). You may have to stay a few days at The Henson like we did to try it all.

My wife and i ate at Matilda recently. The food is un Catskill like. It is extremely Manhattan. That is a good thing. Yes, some of the produce is from upstate New York but the cooking techniques used are from NYC, Europe, and Asia. This is not homestyle comfort food. My wife and i enjoyed our meal. Service was friendly and spot on. The wines by the glass went very well with the food menu. I enjoyed my Riesling very much. The portions were a bit small but by the end of the meal we were miraculously full. And the price wasn't highway robbery. Matilda is new. The decor is simple yet chic. Overall a wonderful experience. Congrats!

Let the buyer beware. I made reservations online for a 5:30 dinner on the following day. The website asked for my credit card info before a reservation could be confirmed. Unfortunately for personal reasons I had to cancel and called 3 hours before my scheduled reservation. I was charged $50 to cancel. This was no mentioned when making reservations. It's very poor business practice - something that I will share with anyone who travels in the area.

My friends and I recently dined at Matilda's it was exceptional. We started with perfectly sour sourdough and creamy butter that was so good I could've stopped there. The East Coast oysters were sweet and refreshing. Our second course featured light, crispy potato dauphin with prosciutto, and the freshest tomato salad I've ever had. The lentils in the third course had a nice sour kick, the arugula and trout roe, and the what we described as a deconstructed onion soup was so comforting and flavorful. For the main, we had steak and duck. The duck, notoriously tricky to get right, was cooked to perfection, tender and flavorful--my favorite dish of the night. We ended with a rich chocolate mousse with hazelnut and a scoop of ice cream, both of which I highly recommend. Overall, a fantastic meal from start to finish. Crowd favorites were the sour dough, oysters, lentils, the onion dish, the duck and the chocolate mousse.

I Took my fiancé out for a romantic birthday dinner last night. I was a chef/owner at a cafe and an executive chef at a resort in the Catskills, so I rarely go out to eat because I can be hard to please. This restaurant delivered above and beyond! We will be back! We were seated next the fireplace and started with the Weiss Ferments Sourdough and house cultured butter. perfection. Crusty, crunchy-chewy with soft butter reminded me of my trip to Cahor. So good, we ordered a second round with our protein course! We then went on to have the Honeynut squash and Kyoto carrots dishes. The squash and carrot had just the right amount of chew. The brown butter and comte cheese sauce served with the squash took our taste buds on a nutty savory journey that was perfectly balanced by the sweetness of the squash. The carrots with smoked almonds, feta and Aleppo peppers forced us into a bread dipping battle, which I let him win this time, because it was his birthday... next time, the last dip is all me. For our Protein course we ordered the Highland Striploin and the Maine Scallops. I usually order my steak rare-med rare, but because we were sharing, I ordered it medium, as a compromise. The locally sourced steak was cooked to perfection! The Maine scallops were served with koshihikari rice. The short grain rice broke down into almost a congee and the pepitas offered the soft velvety dish a little crunch and texture. We finished with the chocolate mousse and were sent out their Matilda sundae on the house as a birthday surprise. This is by far the best meal I have had in the Catskills! The attention to detail and flavor profiles was obvious. Last but not least, the service was spot on. Attentive, intuitive, but not disruptive or over the top. Any questions we had about the menu were answered by our knowledgeable server, Amanda, who I highly recommend. Our waters were always filled, the table crumbed between courses and the dishes always cleared in a timely manner. This is a quality not quantity place, and portion are not huge and exaggerated, but ideal. We left completely satisfied and we are already planning our next visit. *** Reserve ahead of time!!**

Interesting to see so many positive reviews. We went last Spring (2024). There were four of us. We are familiar with previous establishments at this location and I will say that the renovations to the dinning area, out door space and the building in general was well conceived and built - it is quite impressive, knowing what was there before and it's the only reason I give it two stars. Having said that, the experience was terrible. I'm glad we got drinks before sitting down - we waited and waited. Got a server, ordered drinks, then waited and waited some more. They had run out of three out of the 5 main courses on the menu (I believe our reservation was for 7:30pm). One of the hostesses (maybe owner?) came to apologize and asked if she could do anything, to which we said "get us food! anything! how about some bread!" Yes, didn't even have bread for nearly an hour. By now were really hungry.It was well beyond an hour before we finally had food. When the food came, we were told that the plates were meant to be shared. The portions were insanely small, and some served cold, though it seemed that they probably would have been tasty if hot (it was a beef dish). The price tag here would have been north of $400, though ultimately, the meal was comped, though we did pay for the desert. We were still hungry after leaving, so we made some food when we got home. I'm glad others had a good experience, but considering how pricey it is to have such small portions, along with the disorganization, I have to say I'm reticent to return.

Loved the ambiance! Very cozy, fireplace, dimly lit. We ended up waiting 30 minutes for our reservation but they were very apologetic and bought us a round of drinks. Food was very good, smaller portions, on the more expensive side. But overall a nice experience!

Food was overall very good (not mind blowing but very good), but we found it to be very overpriced (even for NYC standards) and the service just awfully slow and not on par with prices charged. Food wise - we had grilled oysters (amazing), tuna belly (which was frankly really terrible, very fishy - but no one was there to check on us), dauphinois potatoes (which really were potato croquettes but very good), lettuces (which was basically just plain lettuce with a tasty dressing - nothing special but good), Japanese eggplant (very good), lentils (good but had to pick out the pork fat pieces) and steak (really good). Overall the food was great, although some portions were laughably small. For example the lentil dish at $18 was a very small plate (maybe 3-4 spoons). The salad was just a plain small place with plain lettuces (tasty dressing though). We don't normally eat a lot, we're not very hungry, shared 7 dishes and frankly were not very full at the end. Service was not great to put it mildly. Everything took FOREVER. For example my husband ordered a Negroni that took a good 40 minutes to come. And when it came out it was missing the sweet vermouth. No-one really checked on us to make sure the food was good and that everything was fine. The hostess was resetting our table and while doing so placed her tray on the table in front of me...which was not a big deal if i was at a diner or a very casual restaurant, except not on par with what this place is trying to be. It felt like they are trying to be this trendy and exclusive NYC restaurant, and the prices were up there but the service was just not there. Everyone was super nice but I just don't think they ever worked at a high end restaurant. If it wasn't for the service I would probably try this place again but at $300 before tax, this was not worth it. I find Silvia and Good moon in Woodstock much better. Service is not even comparable. And food is as good or better

Found this place a little underwhelming, and strongly disagree with food baby guy Mike C that it's the best restaurant in 100 miles. That distinction goes to Silvia in Woodstock. We found all of the apps mid at best. The east coast oysters are actually bad. The prawns are underwhelming. On the plus side, the drinks are executed beautifully and the chicken is exceptional. I'd probably give it 3.5 stars, but rounding up to 4 because I give respect to people trying to bring quality food and sophisticated ingredients to the mountains. I might go back, I might not.

My wife and I ate at Matilda's recently after a round of golf at Thunderhart Golf Course, in Freehold, NY. Place looks beautiful inside and out, great job building and remodeling. We had two appetizers: The oysters were good, interestingly prepared. The prawns were served raw, not terrible however no notation on the menu or from the server. Two entrees: The duck was great and prepared excellently. The chicken was a real disappointment. Our waitress told us it was one the most prized selections on the limited menu, which would easily feed two people. The chicken was served pounded down to 1/2" and in our opinion didn't nearly live up to the hype. The potato side was filled with more turnups than potato. The green asparagus was tasty but tiny. Mixed drinks were very good. Couldn't read the desert men and little help was offered to do so. All in all, we would give this eating establishment the generous above rating. We play golf throughout upstate New York, and we eat out frequently. There are many very good restaurants in the surrounding area. A few are excellent.

Matilda is a gem of the Henson Hotel. The food is excellent, though the portions are somewhat small; we had to order three appetizers for two people. The smoked trout was a bit too salty, but dipping it into the sauce made it delicious. The duck was perfectly cooked, though it could have used a bit more salt, even with the sauce, as it was a bit bland for my taste. The strawberries and potato dessert was absolutely delicious. The service was outstanding, with everyone eager to take care of the guests, and the decor is beautiful.
