Tracé

"At his location close to the Comédie Française, Clément Vergeat gives expression to his latest inspiration in the form of a carte blanche menu abounding with deft creative touches: langoustine, oyster cream and cuttlefish bacon; flame-cooked mackerel with a medley of vegetables; turbot with a bouchot mussel jus. A commitment to sustainability, an organic and natural wine list, serene contemporary decor, and friendly service make this an appealing and authentic place to dine." - Michelin Inspector

The 38 Essential Restaurants in Paris

"Located near the Comedie Francaise in the heart of Paris, chef Clément Vergeat’s highly praised new restaurant generates a low-lit, monastic atmosphere with a minimalist decor of gray chairs and bare wood tables. The small, quiet space creates a setting that allows you to concentrate on the intricate, original, and very subtle dishes that compose the chef’s regularly changing tasting menu. The two memorable dishes stuck out from a recent meal: The first was a raw langoustine steamed in seaweed vapor and topped with a nearly transparent ribbon of squid cured to resemble the Italian fatback known as Lardo di Colonnata. The othe was roasted pigeon with fermented strawberry puree, turnips, beets, and other winter vegetables. Located in the First Arrondissement." - Alexander Lobrano

Fantastic restaurant. Excellent service. Outstanding quality and taste of the food. A young, dedicated team celebrates French haute cuisine. I've visited many top restaurants around the world, and this one is in the top 5. Highly recommended. Thank you.

Amazing! The staff is exceptionally knowledgeable about the menu, and the presentation is wonderful and incredibly detailed. The dishes were phenomenal, and the wine pairing was absolutely perfect. I highly recommend it!

It was just a perfect evening. The food was delicious and very creative. It was also very beautiful, and the performance made us more enjoy our food. They cannot be compared to any restaurant cause it’s really a new sand challenging style. I can call it this was an extraordinary ‘experience’ more than just eating.

Superb, perfect, a complete surprise - overwhelmed our expectations. We were able to book this by chance 10 minutes before the reservation time and it was close to our hotel. The meal was so well assembled. Each round of fares was well constructed, perfectly seasoned and composed to compliment that last dish. We finished our meal with a light but tasty rhubarb, fennel dessert which was incredibly well rounded and finished off the experience delicately sweet but on a high note of being able to appreciate all the dishes. I have to say this is one of my favourite meals in Paris because the food really checks all the boxes, flavourful without compromise but not heavy at all. I look forward to our next seasonal return. Well done - Trace Restaurant

The desserts are tasty. The appetizers and main dishes are not bad. However, I expected more when I spend around 250€ pp. The wines are nothing special. The atmosphere is similar to many cafes, and the FLYS and bugs are annoying.

We went for dinner and we chose the 8 course immersion experience plus menu 5 wines. We also chose a course of cheese as an extra. We enjoyed our time and our meal, and some of the dishes were really well accomplished and very tasty, however, there are a few remarks we would like to make about the experience: - We understand this is a tasting menu, however, having experienced many restaurants around Paris and many menus dégustation, we found the portions tiny. - The 5 wines chosen were insufficient for an 8 course meal. Only the last one, served with dessert was good. The previous 4 were completely bland. - The restaurant does not offer bread, or bread and butter as a nice side offer. This is something we strongly think it should be revised. Only the cheese plate, as an extra, brought 2 slices of bread. One for each. You should not ration bread. - Even though like I said some of the dishes were really tasty, the ingredients are not at all premium for this type of service provided and prices charged. One St. Jacques, one sliver of fish, pear, all available for cheap at local supermarkets do not qualify as premium produce. - Pigeon, is not a consensual ingredient. An animal that is seen as a pest going around every city as a nuisance, is probably best left out of any tasting menu. You could have it a la carte though. People will always wonder about the provenance of this bird. All in all, although we had a good time and the service provided by the staff was top notch, we felt that the menu itself is made on the cheap side, either by quality of the products and their quantity and charged at a very high price.

Outrageously overpriced and underwhelming. The evening started off strong with some interesting info about the restaurant and dishes, but quickly fell flat as we ate sampled bland and tiny portions. The beef was cooked well but somehow still needed to be sawed through. As if the food itself wasn’t unimpressive enough, mid meal my friend pointed out there was an ant ON MY PLATE. I was disgusted and we pointed it out to our waiter who said “well the food was still good, no? It’s spring time, what do you expect…” and cleared our plates with no apologies. We spent nearly $1000 Canadian on food with wine pairings for 4 people. I expect incredible food and outstanding service. A few days prior we had been to a two Michelin star restaurant in another city which was outstanding. Long story short, book a real Michelin star restaurant for the same price or save your money and feel full and satisfied after for a fraction of the cost - and with no bugs in your food!

We loved how they explained the chef’s inspiration behind the dishes c: Everything was delicious. I especially loved dishes with sauce, soup, or mushrooms. Just amazing!
