There are no excessive superlatives that exaggerate the quality of the impact of the food, service, and atmosphere of this unreal experience in dining. Right from the reconstructed tortilla, and, seemingly, the entire cantabrian ocean of delights served in what appeared to be a crispy play on temaki rolls, I knew I was in for a culinary experience like no other. The meal takes you through what is typical in Spain, but served to you in snippets, bites and light broths that belie their original form, while still delivering amply on flavour. I was served a cocido broth that made me stop and remember my grandparents and their patience and kindness with me growing up. I had a liquified ensalada mixta that had me reaching for my cleverly selected Albariño as though I was on the shores of El Sardinero. I could go on and on.
Sometimes you will eat at these places and leave and need some tapas down the road because you are still hungry. I left and didn’t eat anything else all day because I was so full, but also because I still wanted to remember these flavours. What an impact.
Service friendly, professional, efficient, precise… it goes without saying but it is worth mentioning because of their kindness and their expertise. Chef came out to the tables and greeted, and was happy to discuss food and life. It is expensive, of course. But you can have ten meals in the worst of places and never feel fulfilled. Save up your money and put it here. You won’t be disappointed. Truly memorable and worth their reputation.
