Revolver

"Its name is a pun on how cooking revolves around the charcoal grill, brazier and tandoor. Whether you sit at the counter or in a booth, the chefs put on a show that is visible from all seats. Two tasting menus and a vegetarian menu are offered. Dishes are rooted in different regions of India, but are reimagined and reborn over coals and fire. The distinctive smoky flavour and layering of spices works magic, resulting in a delicate balance." - Michelin Inspector

The 38 Essential Restaurants in Singapore

"Indian grill Revolver is a tasting menu-only eatery that doles out charred flavors with bold accents. The menu is completely changed every two months, but there are fixtures; the ever-popular tandoor-baked Kulchette (a play on roti) appears with a different dip bimonthly, while the courgette flower makes regular appearances with various stuffings (like a recent iteration with delicious prawn balchao). There is no doubt that executive chef Saurabh Udinia, formerly of Mumbai’s Masala Library, is destined for Michelin stardom." - Evelyn Chen

Top chefs open exciting new restaurants in Singapore - SilverKris

"Chef Saurabh Udinia's first Singapore restaurant centers on modern Indian cooking with a strong emphasis on fire and smoke, using a custom-built woodfired grill and hand-built tandoor. The menu features smoky, grilled highlights such as charred lobster with garlic butter and curry leaves, Magra lamb chops marinated in mustard oil and Indian spices, and lighter plates like stuffed courgette flowers, all presented in a contemporary interior." - Alexandra Karplus

Discovery tasting menu ($139): 1. Revolver bites duo (avomame gem; mysore lamb with rice cake) - The avocado with edamame on lettuce was fine. The lamb was excellent. 2. Fresh Delhi paneer with winter spinach - Excellent combination of fresh, firm tofu-like paneer with sauce and chilli. 3. Corsican sea bass with coriander dill butter - Excellent. The pepper and dill butter went well with the fish. 4. Charred chicken with pickled kohlrabi - Excellent combination of spices and juicy, tender tandoori chicken. 5. Iberico pluma with Goan cafreal - Excellent. The pork was tender with some bite. The coriander-based sauce went well with it. 6. Kulchette with Chettinad pulled duck and gruyère - Outstanding. Tasted like curry puff fillings but like a cheese prata 7. Charoli yoghurt with rose honey - A great combination of yoghurt and soft serve ice cream. Good service.

Revolver was good, not great. Atmosphere- noisy and a lack of space. We were at the bar counter which was hot because the grill was right in front. Staff kept walking and moving around so didn’t quite feel intimate Food - the food quality was great. The paneer was a standout, and so were the sauces and flavoring in the broccoli and cabbage dishes. Where it fell a bit flat for me was the main course - the truffle Kulchette. Left an overbearing taste. Dessert was kulfi- yummy but nothing revolutionary. Cocktails - over priced (imo) and very average. Service - the staff just seemed really stressed, mixed up / missed orders, and felt like they were in a rush to push you through. Overall - I would recommend it for the food but manage your expectations on the ambience.

This is a great place for Indian food lovers, particularly the use of spices and tandoori techniques. The food portions were also hearty. The best thing is you could see how your foods were prepared.

Revolver, Singapore - An Unforgettable Culinary Firework Revolver in Singapore is a true standout, offering an electrifying and unforgettable dining experience. It's a bold, modern Indian grill concept that fires on all cylinders, delivering a night that is spectacular in every aspect. The Food: Absolutely Fantastic The culinary journey at Revolver is a thrilling showcase of innovation, heat, and flavour. The Chef masterfully combines high-end international ingredients with South Asian techniques, utilizing custom-built wood-fire grills, tandoors, and smokers to impart an incredible, nuanced smokiness to every dish. The dishes from the Anniversary Menu, such as the flavour-packed Kurobuta Pork Belly, smoked naga chilli, demonstrate a perfect balance of tradition and modern flair. The Stag Valley Farms Lamb Chop, rogan josh is a testament to the kitchen's precision, delivering tender meat with robust, aromatic spices. And you absolutely cannot miss the Kulchette, butter chicken, parmesan—it’s a signature for a reason, elevating the humble flatbread into an indulgent, unforgettable comfort bite. Every course is a distinct, carefully crafted flavour explosion. The Atmosphere: Lively and Great The restaurant boasts a sleek, industrial-chic design with dark, moody finishes that create a sophisticated, seductive vibe. The heartbeat of the room is the sunken, open kitchen, where the chefs' passionate work over the flickering wood-fire and tandoor is a captivating performance. This open-concept design, combined with the energetic music and buzz of happy diners, makes for an atmosphere that is truly lively and theatrical. Sitting at the counter, watching the action unfold, is highly recommended for the full, immersive experience. The Service: Spotless The service at Revolver is nothing short of flawless. From the moment you are seated to the final flourish of the Revolver Sundae, kunafa, roasted cashews, the team operates with seamless efficiency and warmth, making every guest feel completely taken care of. Their professionalism elevates an already superb meal into a truly luxurious dining experience. Verdict: Revolver is a must-visit destination in Singapore. It successfully redefines what modern Indian cuisine can be, delivering a meal where the fantastic food, lively and great atmosphere, and spotless service converge to create an extraordinary event. I didn’t expect charcoal grill to be on shown quite like this, you know what, We will remember it. Basic items get elevated to happy surprises from broccoli to cabbage to tomato and avocado. Easy to book, great atmosphere and the chef is willing to share his joy of cooking and serving. Marvelous !

First time here and I am truly impressed by the unique creative food dishes while maintaining the Indian roots. Went for the experience menu and I really loved it. The Delhi Paneer was really mouth watering ❤️❤️❤️❤️

The Delhi Paneer was excellent, with a satisfying texture and well-balanced spices. The Butter Chicken Kulchettes are definitely a highlight, rich, flavourful, and indulgent. The Corsican Sea Bass retained the signature Indian spice profile, and it was beautifully executed. However, the grilled chicken was a little overcharred, which left a bitter aftertaste.
