"Rosemeyer is a food truck that shares a parking lot with a gas station Arby’s in Spring, TX, but instead of translucent roast beef and Horsey Sauce, you’re here for free beer, slow-smoked brisket, and some of the best damn pork ribs in Texas. These aren’t set-it-and-forget-it ribs—they’ve got just enough bite, with an even crust of coarse salt and pepper that feels far more precision-oriented than the picnic tables out front would lead you to believe. You’ll probably spend the 30-minute drive back to Houston (or wherever you’re based) thinking about them like a lost-but-not-forgotten ex. Though your mind may also drift to the forkfuls of excellent pulled pork topped with crispy cracklins, or to a piece of brisket with just the right amount of bite and give. This is a food truck that can hold its own with any of the longstanding juggernauts in town.
