The 31 Best Restaurants in Kolkata (Calcutta), India | Eater

"Royal Vega, the vegetarian luxury dining restaurant at the ITC Royal Bengal hotel, serves the hyperlocal cuisine of Bengal’s Sheherwali Jains, a community of wealthy Oswal Jain merchants from Rajasthan who migrated to Bengal in the early 18th century and settled near Murshidabad, then the capital of the Nawabs of Bengal. Royal Vega’s special Sheherwali menu features classic recipes sourced from the community’s home kitchens, like fragrant pulao perked up with water chestnut, crusty kachoris (deep-fried pastries) stuffed with spiced cucumber and yogurt, and a luscious wet pudding made of tart raw mangoes." - Priyadarshini Chatterjee

Eating green: Where to find the best plant-based dishes in Asia - SilverKris

"A revival of a 300-year-old royal vegetarian tradition showcasing Sheherwali cuisine, which blends Rajasthani, Bengali and Nawabi influences while omitting onion, ginger, garlic and root vegetables. Signature offerings emphasize indigenous preparations such as steamed spicy dumplings and samosas filled with fresh water chestnut." - Lola Mendez and Kursheed Dinshaw

We had a royal experience with scrumptious food. The dining experience was amazing with special attention to each guest. We requested for some phulka for my daadi and they very sweetly accommodated the request. The dal, pulav and kofta were the best dishes. They made my mother in law feel so special on her birthday. Specially thank you to entire team, you are doing a great job!

The food and the service was very sumptuous. The taste was impeccable, for the first time I discovered that vegetarian options can be delicious too! The presentation was well executed as well. Service was excellent too. But there are two "icks" that I would like to point out: 1. Please hand out the warm towels individually. For us personally, as three of us were dining together, the towels were given altogether and by the time the last person finished, the towels were cold. Not something significant but has a scope of improvement. 2. Please for the love of god don't put a TV in the dining space, especially just adjacent to the table. It was really irritating. I like to dine in peace and a cricket match going on just 2 ft away from my eyes was really not something I liked. Others may find it appealing but I didn't. Also, since we were the only ones dining at that particular time, our request to switch it off could probably have been entertained I believe.

Loved the detail on the table setting, food display and thali presentation. Taste was good but felt too rich and satiating over being fresh and light. Service was good but slow. Loved the option of having a seasonal thali so you can have what’s traditionally recommended for the season.

This signature restaurant presents a delightful offering of delectable vegetarian food from the magnificent royal Kitchens of India. Guided by the precepts of Ayurveda, much of the cuisine on offer is attuned to the season, observing the ideal combination of tastes. The concept of the Royal Vegetarian Menu is manifested on three imperative factors. The first being the philosophy of taste or rasa, second being the food crop, vegetables, fruits and grains available round the year and finally followed by the Perennial availability of the fruits and vegetables according to the six seasons on the stretch of every two months in the Indian Calendar. The Indian sub-continent experiences six seasons and hence our food requirements are as per that particular season. With every two months (masa) commencing with magha, are the six seasons (ritu); sisira (cold and dewy), vasanta (spring), grisma (summer), varsa (monsoon) and hemanta (winter). The Vasant Ritu Menu on offer till 14th May 2022, encompasses the restaurant’s multi-faceted vegetarian repertoire with delights like Mewa Paneer or stuffed rolled paneer and premium dry fruits slow cooked in a gravy of poppy seeds, cashew nut and khoya, Kadali Badaam Kofta or green bananas and almonds marbles simmered in onion and curd gravy finished with timur, Shatawari Maarmik or crisp green asparagus tips seasoned with nuts and raisin pleasant to the heart, Shahi phal Sandesh or layered sandesh and season fresh fruits napped with rabri flavoured with cardamom and pampore saffron. The food was satisfying, not over exaggerated but settle, flavors were prominent be it the spices, dairy part or the vegetables. The Vasant Ritu Menu is available as a set menu at INR 2250 plus taxes, ala carte portions are available on request.

The best part it's pure veg & option for pure jain thali as well. They are 4 thali options in which u can choose as per taste needed. This I'll definitely say that no thali will disappoint you. 😬😬 A definitely must visit.
