On the à la carte side, expect seasonal plates and generous portions: go for la sartén de pato, one of the first of its kind in Lima, the Amazonian ceviche with plantain, between acidity and sweetness, and the Paracas scallops, or pasta stuffed with corn and ají amarillo.
