After months of trying to secure a reservation, we finally had the pleasure of dining at Sabayon — and it was more than worth the wait. My wife and I visited with another couple, and from the moment we arrived, we knew we were in for something special. Chef Patrice addressed my friend’s allergies with impressive attention to detail. The care he took in crafting each dish was evident, and his ability to adapt the tasting menu without compromising flavour or creativity was masterful. We had the tasting menu and opted for wine pairings, and the experience was nothing short of exceptional. Patrice presented each course, proudly highlighting the use of local, seasonal ingredients, which added a meaningful layer to the story behind each plate. Every dish was beautifully balanced, inventive, and absolutely delicious. Equally commendable was Marie-Josée, who guided us through the wine pairings with passion and precision. Her selections not only complemented each course perfectly but also reflected the same local-first philosophy that made the entire meal feel deeply connected to its place. The harmony between kitchen and cellar, between chef and sommelier, made this evening unforgettable. Sabayon is not just a restaurant — it’s an experience, and one we can't wait to repeat.

Fabulous experience, one of the best table we ate at this year in Montreal. Patrice and Marie-Josée offer amazing food and service, it’s hard to believe it’s just the two of them! Plates are elevated, original and delicious. Price is extremely honest as well, 100% worth the struggle to get a reservation :)

Enjoyed a truly exquisite meal starting with some delightful amuse-bouche, followed by asparagus with smoked eel, calamondin. Then came the incredible lobster with morel mushrooms, white asparagus, and fresh herbs, which was absolutely delicious. Next was Arctic char with caramelized onion and mushrooms, followed by grilled mushrooms with arlette, sabayon, and celeriac. For dessert, I had rhubarb granite with whipped cream, roasted almonds, and edible flowers, then chocolate mousse with pecans and wild caraway, finishing with mignardises. Each dish was a work of art, especially that lobster... it was incredible! That Michelin star is well deserved. We'll be back for the next season.

Amazing place. We were lucky to book it. Trying all these chef-d’œuvres from local products was a great experience. I wouldn’t like to evaluate the service because the restaurant is running by only 2 people, so you must inevitably understand the time it takes to serve 14 people. Imagine it your are doing yourself and your wife. Even you are great in it. Not easy. I didn’t understand some taste pairings like grilled cucumbers with lobsters, in my opinion cucumbers do not benefit at all but the rest of the menu was really perfect. Pistachio ice cream parfait is a killer dessert. Cocktails are strong and good. Wine pairing also good. Thanks for the experience

Amazing experience! I managed to book for the tea experience, and it was great. The tea pairing with the desserts was well done. We especially loved the cheesecake and brioche! I wanted more. Definitely recommend it if you can get a reservation.

Super nice afternoon tea experience! Different from other afternoon tea I’ve been, you don’t choose the tea. Instead the tea was paired with each course. I loved the fact that I got to try different kinds of tea. And they paired well with each dishes :) Will definitely come back to try the dinner too!

I have been a big fan of Patrice since being a regular at his patisserie, so we tried months to get one of the few reservations. I expected the desserts to be amazing, but it was genuinely one of the best tasting menus and wine pairings I've ever had. I can't wait to try the afternoon tea.
