"Bloomfield continues to steer the kitchen at her acclaimed Brooklyn restaurant, which she runs with restaurateur Gabriel Stulman (of Fairfax, Joseph Leonard, and Jeffrey's Grocery); since the announcement of her partnership with the Texas group, the restaurant installed a new executive chef, Skylar Mosca. Eater crowned the restaurant one of the year's best new restaurants in 2024, saying that "it represents the return of chef April Bloomfield to New York and the British-inflected cooking that made her name." In his three-star review for The New York Times, Pete Wells declared that Bloomfield is "cooking the best food she’s ever made." He went on to say that her "understanding of her craft has deepened since the crack-up. The news follows the announcement that its star chef, April Bloomfield, who has run the restaurant alongside restaurateur Gabriel Stulman since its opening in 2023, would be making the unusual leap of heading up a hospitality group in Austin; Bloomfield will retain involvement in the restaurant and has since installed Skylar Mosca as executive chef. Mosca recently participated in a culinary series that gives back-of-house folks a platform and resources to plan their dream pop-up restaurant. The spot was the first Brooklyn restaurant in Stulman’s Happy Cooking Hospitality group, which is known in Manhattan for places like Joseph Leonard (an oyster bar) and Fairfax (a West Village brunch staple), and demand for more seats at the restaurant was instant." - Emma Orlow
"How Far In Advance Should You Book? A full two weeks, or, if you’re doing lunch, a day or two. Self-described “neighborhood bistro” Sailor didn’t feel all that neighborhoody when it opened in 2023 and was immediately booked solid. Slowly, it’s getting there. We recently walked in on a weeknight and didn’t even have to wait for a bar seat. Reservations are doable, too, as long as you plan ahead.
