A much needed update, as my opinion and their performance have changed significantly, both on the upswing.
Pain au Chocolat (I just say chocolate croissant): Excellent flavor, minimal use of but very high grade chocolate, boldly buttery. Not fully crackly but much more so than my first two tries. Other than Lakon Paris and Cremeux (neither of which can match Salt on other fronts), I can't think of a better one in the area.
Pain Au Raisin: Eye-catching with tremendous shine, and excellent, better than the chocolate. Nicely glazed, better than Lakon Paris both visually and for taste, though Cremeux and PB Boulangerie would be my faves for this. Moist pastry cream between the dough spirals adds shininess in several different ways.
Palmier: I don't get this item often, so not much to compare it to, but I thought it was a really nice combination of light/flaky and as bendy (need that) as it was brittle. Glaze was buttery and faintly almondy. Elegant simplicity deliciously done. Really enjoyed this one more than I expected.
Chocolate Chip Cookie: Great, absolutely great. Third, fourth, and fifth time trying and just as great every time. I've always loved it, and I'm ashamed that I didn't previously give Salt higher than 3 stars based on this item alone. Thick, bendable, chewy, buttery, and for me the perfect ratio of delicious chocolate to delicious cookie dough. Every aspect is brilliant and it's the best chocolate chip cookie I've ever had (sorry, Mom).
Chocolate Caramel Tart: Nicely crunchy of thin crust, only moderately buttery. Chocolate tasty with a little bit of bite and just sweet enough without being heavy. Caramel a nice contrast. and gold foil gilded the lily. Solid item.
Black Forest Cake: Wow, wow, WOW. A triumph of construction and flavor, this is edible art at its finest. So many different elements, it's hard to let it all sink in (though my hips will surely let it sink in, unfortunately). My wife wasn't interested, so I couldn't compare notes. But a few different cakes in layers and a few different fillings, including a creamy cream and a cherry liqueur cream. Bordeaux (or similar) cherries on top, along with some added swirls and ornamentation. And the chocolate, though thin of texture like Hershey's syrup, is intense. Is the cherry-to-chocolate ratio a little low? Perhaps, but poetic license and creativity get them off the hook. Gotta have strong black coffee with this one. And for me, a notepad to grasp it all better next time.
Mea culpa on my previous review. There I was, Croissy Croissantface, all high and mighty, dropping a 3 because they didn't make my favorite croissant. It's still a very good one, and this place does enough things well and enough things GREAT that I don't care if they don't make my favorite croissant. For overall breadth, creativity, execution, and service, Salt ranks with the very best of them and for me is the most exciting patisserie in town.
