The morning after dinner, I stood alone in the Airbnb staring out the window, trying to put the meal into words. The sky was heavy and low, but a strip of light broke through the mountains. Mist hung in the air, and where the light hit it, everything sparkled—actually sparkled, suspended in the air. I took a photo knowing it wouldn’t really capture it. Some things don’t translate. They just sit with you. That’s when it clicked: the meal felt exactly like that view. This meal felt quietly immense. Ancient and assured. Like Mother Earth herself gathered the ingredients and said hold my purse. There’s a rare skill in cooking solely from what your region offers, and it’s a blessing to have someone who knows those offerings this deeply. During the pandemic, I found myself wandering my own woods, scanning plants, wondering how I’d survive if the supply chain disappeared. Here, that question is already answered—calmly and confidently. The bread set the tone. Knowing its story and lineage, tasting how good it was with that glossy smoked brown butter and a dipping sauce that nods to other cultures, then elevates them through local resources—it was inspiring. Restrained, thoughtful, and better because of it. The chawanmushi might be the clearest expression of the menu. Uni has always been pure ocean to me, but here it felt grounded—like the sea just beyond the mountains. Earthy, saline, quietly powerful. Paired with the Siren cocktail, the place came out swinging. The sablefish followed, and the oyster cream with the grape—honestly incredible. Deep, balanced, finished with that mouthy caviar feel and the bite of pumpernickel keeping everything in check. Birch ash lodged itself permanently in my memory. The boar spoiled me completely—when my son hunts and we send an animal for processing, the belly is now the only cut I want. The bison was perfect too, every trace of game knocked off in its butter bath. My husband was practically vibrating with excitement, and he has a toddler palate 😅. Even the details mattered. The upcycled china, the mismatched patterns, the quiet history they brought to the table. I collect china, and seeing it used this way felt intentional and respectful. I still don’t know if I have the right words for that view or that meal. But I do know this: I left with a new standard for dining. If you can’t show me your land, your people, and your spirit on the plate, I don’t want it. It felt real. Rare. And it probably ruined fine dining for me—in the best way 😅. This community is blessed.

We celebrated our 16th anniversary here and had booked a table in advance. It was our first time dining at the restaurant, and we both chose the 5-course “The Hunter” set menu. From the moment we arrived, we felt truly welcomed. A handwritten card signed by the staff was already waiting at our table—such a thoughtful touch that instantly made the evening feel special and personal. Every course was exceptional. The textures and flavours were beautifully balanced and clearly well thought out—you could genuinely taste the love and care in each dish. The service was just as impressive: attentive, warm, and communicative without ever feeling intrusive. Our only regret is not coming here sooner. If you’re up for a treat, just book a table—you won’t regret it.

We dined @ Sauvage on Jan 18, 2026. What a delightful find! My husband surprised me with this birthday outing. I had read about Sauvage in an AMA magazine. It is an outstanding adventure with an indescribable tasting menu of foraged ingredients, ethically sourced. We enjoyed the “Hibernus” Hunter Variation. Each of the seven courses paired perfectly with Canadian (many Okanagan) wines. William proved to be a confident; expert sommelier of the wines and the very personable Maria made each course a storytelling adventure. We spent three incredible hours savoring each bite. Where else could you experience a pine cambrium flour brioche with saskatoon berry agrodolce and whipped smoked brown butter? What a delightful experience. Highly recommend for those with a discerning and appreciative palate. We will definitely tell the world about this place and be back soon!

What an elegant evening of tasting some amazing food by a chef who is truly an artist. We enjoyed a five course meal with foods that included trout, scallops, boar belly, and bison. The mixture of flavours from each bite was indescribable. A beautiful setting and the service was outstanding. A great option for a romantic dinner with your significant other or an excellent meal with a group of friends. If you are in Canmore, I would highly recommend.

We visited on our honeymoon trip and are absolutely blown away. The tasting menu was absolutely amazing, perfectly curated dishes for the season. You can tell there is so much thought that goes into each dish, the chef even forages the mushrooms and ingredients for the tea! This was such a unique and memorable experience! And the service was just as amazing. Highly recommend for anyone celebrating something or just having a fun date night.

What a beautiful surprise to have found in the small town of Canmore! We had the 5-course tasting menu with wine paring. The fragrance of every course was wonderful. Our server, Amanda, made the evening even more special. She guided us through the meal with a lot of knowledge of what was prepared and a genuine enthusiasm. Each dish had a story. Her care and attention to detail definitely elevated the experience. Highly recommended! Reservations recommended.

This restaurant is near the top (perhaps tops) of my list of the greatest restaurants I've experienced globally. The tasting menu used such an amazing array of indigenous plants, proteins, herbs, and some of the most unique presentations and preparations my wife and I have ever seen. Every dish was a masterpiece. I dont have the words. The pictures speak for themselves. Our server Maude was an outstanding guide and companion through our meal, and her interest and willingness to discuss the ingredients which are shared with the first nation's people's of Canada with my wife, who is a proud Anishnabe woman familiar with many of the ingredients but we found them all used in new and amazing ways was fantastic. ⭐️⭐️⭐️⭐️⭐️ chaga powder, sweet grass, spruce tips, a variety of locally sourced berries, each one uses to perfection and in ways we never would have imagined. Bravo!

One of my favorite restaurants in Canmore. They use seasonal and local ingredients, and everything is made in-house, without trying too hard to show off. We had the course menu with wine pairing, and the combination of food, wine, and service was absolutely perfect. The space feels a little small, but the beautiful interior more than makes up for it. While we were dining, there was a proposal at the next table, and the bride-to-be said yes—so we even got to celebrate with them! The price is on the higher side, so it’s not the kind of place you’d go casually, but if you’re looking for a special or romantic dining experience in Canmore, I highly recommend this restaurant.
