"Take a space that feels a little bit like a boxcar diner furnished by a tiny house designer, add some all-day breakfast, and you get Seattle Biscuit Company. Food-wise, everything here obviously revolves around biscuits, which is great news because the biscuits are really, really good. You’ll find a lineup of sandwiches like the Gus (our favorite - fried chicken, pickles, sweet onion mustard, an egg, and thyme-y sausage gravy) and the Lunch Pail (peanut butter, apple slices, and berry jam), but also classic dishes like biscuits and gravy. If you’re really starving (or have a bunch of friends with you), you can always get the Bishop Jim Earl Swilley, which is a plate of biscuits, four eggs, bacon, ham, cheese, pickles, gravy, pulled pork, sausage, and grits, all served with a 40 oz. bottle of Bud." - Aimee Rizzo

"This little shack-sized joint on Leary Way has a hidden gimmick: All of the ingredients are sourced from places so close that co-founder Sam Thompson, a former professional endurance runner, can jog to them. The biscuit sandwiches here have none of the asceticism associated with long-distance running, however: We love the one with fried chicken, sausage gravy, and sweet onion mustard; another fan favorite is the Che, SBC’s version of a Cuban sandwich. "There are a lot of biscuits in this town, but few are as good as the ones at Seattle Biscuit Company. The dining room looks like a boxcar diner in the middle of nowhere, which is inexplicably comforting at brunchtime. We could see a pre-ride coffee and biscuit situation happening here, though a post-ride pile of fried chicken and sausage gravy with a Bloody Mary on the side might be nice as well. "It might seem obvious, but we are morally obligated to tell you that Seattle Biscuit Company has excellent biscuits. You’ll find a lineup of sandwiches like the Gus (our personal favorite, with fried chicken, pickles, Walla Walla sweet onion mustard, an egg, and gravy) and the Willie Lee (egg, Beecher’s Flagship, bacon, and berry jam for a curveball). But you could also get one topped simply with butter, honey, and rock salt. It’s also always a great time hanging out in their space that looks like a boxcar diner.
