5 star update because I just had the most incredible dinner at Seito in Baldwin Park and the world needs to know! Wow, Chef Huy Tin is really doing something special here. I love that there are new things to try just about every time I visit and I'm going to let you in on a little secret... I hardly ever get actual sushi rolls at Seito Sushi, haha.
I just can't get enough of their small plates, specialty nigiri, and their meat & seafood dishes. The szechuan beef dumplings will forever be my favorite and I hope those never go away (because I'll cry). They're perfectly spicy and everything a dumpling should be. We also decided to try the roasted bone marrow this last time which is served with a bourbon shallot jam, soft boiled egg (onsen tamago) & ciabatta. Dang, melts your mouth like butter!
We started with one of their newer cocktails called the "Melon Mami" (play on umami) which is made with coconut washed rum, sake, and honeydew melon. This drink is phenomenal and I'm officially obsessed. It's so refreshing but still packs a punch... shout-out to Lorena for knocking this one out of the park!
Under the mains, I'd highly recommend the crispy whole fish which is great for sharing. It comes scored already so it's easy to separate from the bones. It was yellowtail snapper the night we had it, but the type of fish does change depending on size & quality. It comes with bibb lettuce on the side so you can make about 6-8 little lettuce wraps out of it -- SO GOOD!
Now on to the the nigiri which I'm most excited about! Seito recently added a "Chef's Creations" section to the menu and let me tell you right now to go ahead and just order literally everything from this section. This is where you'll find the Kanpachi Crispy Rice, which they debuted at Yelp's Disco Jungle earlier this month (IYKYK). That's right -- this bite was so popular at the event, they added it to their menu whaaaaat?!
You absolutely do not want to miss the Torched BBQ Salmon and the Fu-Manchu Toro nigiri. Trust me, you'll want to order double. We also loved the G6 (A5 Miyazaki wagyu, caviar, black truffle...omg) and the Smoked Hamachi which has a beautiful presentation.
Clearly, we were wayyyy too stuffed for dessert, but I'm still dreaming about this meal almost a week later and already thinking about when I can do it all over again. Run, don't walk y'all!
