Over the course of the past month or so, I've returned to Shuya several times to try most of the ramen as well as many other appetizer items (temaki, tebasaki, brussel sprouts, etc.).
Every single ramen is exceptional, with character and depth of flavor. And unlike most of the other ramen shops in NYC (and Japan!), it's not heavy, fatty tonkotsu-based. Shuya sets itself apart with a lighter and definitely healthier approach with shoyu and/or clear-based broths, but with many, many incredible dimensions of flavor.
The whole experience is casual, warm, and yet, exciting. The ramen bowls are made by Shuya, the owner and the person making every ramen order. The furniture is made by the other owner, also named Shuya.
I usually sit at the counter. I watched Shuya preparing ingredients for the broth, roasting fish bones and vegetables. He makes the noodles in-house. The wagyu comes from Japan. Everything really is thoughtfully prepared. I ask questions about the ingredients, and Shuya answers--he's generous, warm, and fun. There are no shortcuts here.
As a food-lover who has lived in NYC for many years, traveled around the world for food, and yet, rarely writes Yelp reviews, I want to support restaurants like Shuya because this is how it should be: honest and thoughtfully prepared food!
