Then they can choose shrimp and corn chowder or a Silverado salad bowl tossed tableside. Then choices include braised lamb shanks slowly simmered with merlot and garden vegetables with creaked Yukon gold potatoes, caramelized black pepper chicken breast served with steamed bok choy and wild rice with toasted pecans, or pan roast Pacific salmon on a bed of sautéed zucchini with tomato vinaigrette with baked or whipped Yukon gold potatoes. Next, diners pick cream of artichoke soup with Parmesan crisps or the Christmas salad with lollo rossa and green leaf lettuce, red and yellow grape tomatoes, and hearts of palm with Champagne vinaigrette. Entrée choices include herb-roasted young turkey with giblet gravy, apple and chestnut dressing, Yukon gold mashed potatoes, maple glazed ham and baked acorn squash with cranberry relish and green beans; blackberry filet of beef with prosciutto, spinach, and provolone cheese with blackberry wine deduction and sautéed mushroom caps served with roast chateau or whipped potatoes; or halibut Noël, poached with chardonnay, topped with crab and teardrop tomatoes, watercress cream sauce, and asparagus tips served with roast chateau or whipped potatoes.
