"Slow Boat Tavern, opened by Ken Provost in 2015, aimed to merge Capitol Hill classics The Comet and The Stumbling Monk, creating a blend of dive bar and Belgian ale house. Known for pouring top craft beers and building a community in Hillman City, the bar is closing as Provost doesn't own the building and decided to sell the business. The bar will be sold to new owners who will reopen it as Mimi, likely in the summer. "Slow Boat is one of our favorite beer bars in town. It’s dog-friendly, the tables are made from repurposed arcade games, and there’s a neon “f*ck Yelp” sign that tints the whole bar dark pink. Their beer list is super diverse—you can get a can of Rainier, something from a local Seattle brewery, or a beer from a relatively popular international brewery, like Mikkeller, too. "Tucked away from street view in Hillman CIty, this sleepy tavern’s dark leather upholstery and cozy, rosy lighting make it a delicious cedar-scented treasure for hard-to-find drinks like Alpenfire cider and Danish cherry wine. It’s the kind of place where people throw their peanut shells on the floor, and there are usually a couple dogs down there as well.
