What is a smashburger? It is a hamburger creation by Tom Ryan, Ph.D. who holds a Ph.D. in flavor and fragrance chemistry from Michigan State University. Who is Tom Ryan, Ph.D.? CEO and co-founder of Smashburger. Co-founder of Tom's Watch Bar and Global Taste Advisor at Jollibee Foods Corp. Jollibee Foods Corporation acquired 100% control of Smashburger in 2018 at an estimated total cost of $218 million. Rick Schaden is the other co-founder of Smashburger and Tom's Watch Bar. He is the former owner of Quiznos. Tom Ryan, Ph.D. worked at Quiznos as Chief Marketing Officer. The first Smashburger opened in Denver, CO in 2007. This restaurant is the second attempt at operating in Washington DC. The first was opened in September 2013 at 1739 Connecticut Ave near DuPont Circle, but they closed in 2014. This restaurant opened on July 28, 2021. There are locations in Rockville, MD and Arlington, VA.
A Smashburger is made by starting with a ball of ground beef made from never-frozen Certified Angus chuck and steak trim. The beef is ground via a process that more closely resembles being cut with knives versus extruded ("so it holds onto its juices and the fat stays in," according to Ryan). The raw meat ball is placed on a butter-brushed 385-degree F griddle. The meat ball is immediately smashed down for 10 seconds. "smashing creates a deep caramelization, and it sets up a loose and tender texture that forces juices to bubble up through the burger," according to Ryan. After 90 seconds the burgers are scraped off the griddle and flipped with a spatula that's sharpened every morning, and they're done after three minutes. A special seasoning is sprinkled on the patty while it is cooking. The seasoning has kosher salt, black pepper, garlic, all natural beef flavor and grounded triple roasted chicken skin. Now you know what a smashburger is.
My wife and I got a Double Smoked Bacon Brisket burger, a Colorado burger, regular french fries and an Oreo shake. The Double Smoked Bacon Brisket burger had two smashburgers with applewood smoked bacon, brisket, smoked cheddar cheese, pickles and BBQ sauce in a brioche bun. It was one of the most savory burgers that I have ever had!! There was a rich beefy grilled flavor. The burger was not thick, but the flavor was excellent! The outside was nicely grilled while the inside was moist and tender. The bacon was thick and had a modest smoky flavor. It was not crispy and a little salty. The lack of crispness was fine, but the saltiness wasn't needed. The brisket was tender and savory. It had just the right amount of fat. The smoked cheddar cheese was a well-matched complement for this sandwich. The brioche bun was soft and tasty yet strong enough to hold everything together. This sandwich was a tour de force of flavor!!
The Colorado burger had a smashburger, grilled green chiles, melted aged cheddar and Pepper Jack cheeses, lettuce, tomato and mayo in a spicy chipotle bun. The smashburger was excellent, but two burgers would have been a better match to the amount of tomatoes, lettuce and cheese. It had a savory and spicy flavor that worked well together.
The french fries were crisp on the outside and moderately soft on the inside. It was lightly salted and not greasy. The taste and texture was that of a good Russet potato.
The Oreo shake had tiny pieces of Oreo cookies in it. The pieces were unnoticeable while drinking it. It was creamy smooth with an Oreo cream filling flavor. I considered it a dessert. A great finish to the savory meal!!
In case you're wondering what's in the Smash Sauce, it's made with mayonnaise, mustard, pickles, and lemon juice.
The dining room and restrooms were very clean. The restroom doors are locked. You need a numeric code to unlock the restroom door. Ask an employee for the code. The employees were friendly and helpful. It was hard to find parking in this area. Metro is nearby. This restaurant has great tasting food at a comparable price point to other fast casual restaurants in the area. I would highly recommend this place!!
