If you are anywhere near Pham Ngu Lao and you don’t eat at Sol Restaurant, you have genuinely messed up your Saigon trip.
This place was so, so, so good it deserves a standing ovation and possibly a small parade.
Let’s start with the absolute star of the evening: Huy. Friendly, efficient, constantly smiling, effortlessly cool, and somehow managing to make you feel like you’re his favourite table without neglecting anyone else. He even joined in our favourite-movie chat, his pick was The Green Mile. Solid. Emotional. Excellent human choice. Mine too. That alone earned him legend status, but then he backed it up with flawless service all night. The man doesn’t just wait tables, he hosts experiences. And apparently is the guy who responds to google reviews… so on a personal note - love your work Brutha from another Mutha!
Now the food. Oh my word, the food.
The ceviche selection; fish, mussels, oysters, scallops, served in a frozen bowl (with the excitement of the dry ice experience) and looking like edible art. Fresh, balanced, punchy, and so good we immediately reordered because self-control is overrated when something tastes this good.
The Japanese mussels? Absolute triumph.
The chicken taquitos? Also got the reorder treatment because we are weak and proud of it.
Wine? The Kim Crawford Sauvignon Blanc was missing. No drama; the Pinot Grigio Huy suggested didn’t just fill the gap, it obliterated the comparison. Blew the Sauvignon Blanc clean out of the water. Loved it so much we are currently halfway through bottle number two, which tells you everything you need to know.
I’ll admit it, the slightly cheesy welcome and the overly enthusiastic hostess (although bloody good too) at the start briefly scared me. I thought we might be heading into gimmick territory (think TGIs “getting freaky with the fries” kitsch) How wrong I was. This is not freaky-fries-and-Instagram nonsense. This is serious food, cooked superbly, served with panache and flair, and delivered with just the right amount of self-deprecating humour (entirely unnecessary, the place is excellent).
Huy, I know you’re reading this, thank you. You didn’t just make our night, you made our stay in Saigon, and honestly, our whole Vietnam adventure feel that bit more special. It’s the small things done exceptionally well that make the difference, and Sol absolutely nails every single one of them.
We will be back.
