Stagier is an absolute must-visit for anyone who appreciates fine dining in a vibrant, intimate setting. This small bar delivers a truly exceptional culinary experience that stands out for its sheer creativity and phenomenal taste. The food is the undeniable star of the show. Each dish is a work of art, both visually and in terms of flavor. The creativity is off the charts, and most importantly, everything tastes absolutely delicious. It's a fantastic journey for the palate. Complementing the incredible food is the service, which is both highly professional and attentive. The staff is knowledgeable and contributes significantly to the overall excellent experience. Be warned, the venue is quite small and cozy, which means it's often difficult to get a seat. I cannot recommend this enough: you should absolutely make a reservation well in advance to avoid disappointment. Overall, Stagier offers a top-tier experience with its inventive, high-quality food and impeccable service. A true highlight in Palma!

Ambience & Service From the moment we arrived at Stagier Bar in Palma, the experience felt relaxed yet polished — an environment unpretentious in appearance, but clearly well-run and attentive. The staff were helpful and knowledgeable, guiding us through the dishes and making recommendations without being overbearing. The venue felt comfortable and inviting: not overly formal, which made it suitable for a memorable yet friendly evening out. Food & Flavours The menu at Stagier Bar is particularly impressive, both in terms of concept and execution. The team clearly takes great care with ingredient choice and combination, and it shines through in every dish. Starters Sourdough bread with smoked butter: A simple but highly effective opener. The bread arrived warm and crusty, and the smoked butter lent it an underlying depth of flavour that elevated what might otherwise be a common starter. Tomato, Huacatay and yucca tartare: This dish was a revelation. The tartare utilised ecológico San Marzano tomatoes preserved, teamed with a huacatay emulsion (an aromatic Peruvian herb) and capers, accompanied by yucca chips. The interplay of the sweet acidity of the tomatoes with the herbal huacatay and the crisp texture of the yucca chips was exceptionally well balanced. Amberjack tiradito with yellow chilli pepper and kumquat: A beautiful plate of thinly sliced amberjack, dressed in leche de tigre with ají amarillo and kumquat, accompanied by sweet potato and Peruvian corn. The citrus-bright kumquat cut through the richness of the fish and the pepper’s heat, resulting in a lively and very modern flavour profile. Main Courses Roasted chicken cannelloni with foie gras and black truffle: This dish revealed the kitchen’s ambition and capability. A cannelloni filled with richly stewed chicken in wine, uplifted by foie gras and finished with a Parmesan-based béchamel and black truffle. The truffle lent it luxury without being ostentatious; the execution was thoughtful and satisfying. Crispy Gyozas with Lomo Saltado and Ají Amarillo (6 units): A playful fusion dish combining Japanese form (gyoza) with the classic Peruvian lomo saltado filling and a creamy ají amarillo sauce. The dumplings were crispy, well-filled, and the ají amar­illo added a vibrant spicy dimension. Desserts Latin America (Chocolate, corn, pisco jelly, coffee praline, hazelnuts and corn nuts): A thoughtfully composed dessert bringing together ingredients from across Latin America. The interplay of chocolate ganache, the crunch and heft of corn nuts and hazelnuts, the coffee praline and pisco jelly created textural and flavour contrasts that kept the palate engaged until the last bite. Milk chocolate and macadamia fritter: As a lighter follow-up, this was an elegant choice: warm, crisp-frittered shell, melting milk chocolate and macadamia nuts — comfort meets finesse. Highlights & Observations The theme of Latin-Mediterranean fusion is clearly at the heart of the menu: ingredients and techniques from Latin America blend with Mediterranean sensibilities to delightful effect. Plating is clean, modern but not gimmicky; the dishes feel handcrafted and the passion for ingredients is evident. Service truly enhanced the evening: the staff were attentive, patient with questions, and managed to steer us to a full and varied experience without pressuring us for more than we wanted. Venue atmosphere: As noted, unpretentious yet comfortable — making it a good fit for special occasions or a treat evening, but without the stiffness of overly formal dining. My only caveat—and it is more a personal hope than criticism—is: when are they opening in London? If the team behind Stagier Bar ever decide to bring their concept to the capital, they would undoubtedly find an eager audience.

This restaurant blew us away. The Tartar de Tomate was bright, flavorful, and refreshingly inventive. The Bocado de la Reina melted in the mouth, rich and indulgent, perfectly paired with a vibrant chimichurri and a luscious potato gratin that stole the show. The fish tacos and octopus special were nothing short of spectacular—bursting with bold flavors and cooked to perfection. One of the most wonderful meals, even after we ate our way across the must stops in Ibiza. Not to mention the staff is warm and no fuss, making this clearly a local favorite.

A cosy, unpretentious spot with amazing food and a warm, international atmosphere. We tried the truffle and mushroom croquetas, the chili croquetas, their famous truffle egg, wagyu beef and the brilliant dessert with passion fruit, coconut foam and lime — all excellent in flavour and texture. The music and vibe were just right, though I’d have loved the lights a bit dimmer. The only downside was that the service felt slightly tense at times, which made the mood less relaxed. Still, overall it was a wonderful evening — great food, great people, and a place I’d definitely return to (though I probably won’t since my wifey has a non repeat rule)

Michelin Star Level made in a tiny little open kitchen, where the Chefs create their magic! Absolutely loved the food. Every bite of it! We went for the Menu de degustación for 68€ and we can still not decide which plate was the best. Therefore: 5 star rating well deserved. With only few tables, better make a reservation beforehand 💫

We had a wonderful dinner at Stagier. The place is tiny - just a couple of tables, but absolutely worth the trouble of planning / booking. Inventive dishes (fusion of Mediterranean and Peruvian it feels?), top-notch ingredients, excellent presentation, slick and professional service, and, as always, you can tell already, as soon as the bread basket arrives, that the meal will be outstanding 😁 Amazing job, brigade de cuisine! Would love to be back.
