Sushi Hil - Review - Mount Pleasant - Vancouver - The Infatuation

"At Sushi Hil, one bite can get your full attention. This Mount Pleasant spot highlights the natural taste of the ingredients and lets them shine, whether it’s an expensive cut of tuna or just some chilled greens. You can go luxe here and get the best versions of the heavy hitters: lightly seared A5 wagyu nigiri, just warm enough to unlock the richness, or beautifully cut bluefin otoro sashimi. But even the humble spinach gomaae, dressed with sesame and wasabi, is prepared with such precision it makes every other version you’ve seem limp in comparison. Though the menu is clearly fish-forward, the vegetarian dishes are far from an afterthought, like the Super Garden Roll (avocado, mango, and spicy tomato ponzu), which is complex and vibrant, not a compromise. It’s nice enough for a romantic dinner or business meeting, but casual enough for pretty much any other scenario, too." - Michelle Sproule

"Natural light floods the dining room at Sushi Hil, where blonde wood furnishings set a clean, contemporary tone. The best seats are naturally at the counter, where guests can watch the talented and engaging Chef Hil Nguy craft his jewel-like pieces with great care and efficiency. Seasonal ingredients and high quality fish shine, as in a dish of Japanese sweet prawns accompanied by the just-removed head, served simply over crushed ice with a dab of wasabi. Aka Isaki, or red grunt, is served with orange to underscore the power play of salinity and citrusy sweetness, while aji (mackerel) from Kagoshima has an added zing with grated ginger-scallion. Other standouts include otoro, ikura and chopped tuna, and black throat perch." - Michelin Inspector

We came here for lunch, as the dinner reservations were all fully booked on short notice. The food was exceptional. All of the sushi was absolutely delicious and really meticulously prepared. All the staff were very kind and friendly keeping us constantly topped up with their green tea and water. Plates were cleared quickly. Couldn’t recommend this more, it’s one of the best sushi places I’ve been to outside of Japan and it feels very authentic!

Had an amazing experience at Sushi Hil! The sashimi was incredibly fresh and flavorful, and the sizes were generous. Every bite melted in the mouth. You can tell they care about quality here. The atmosphere was relaxed and welcoming, and the service was great too. I’ll absolutely be coming back and recommending it to friends!

Google
My second time here and the food was great! Got the lunch set, maki set, and bluefin tuna roll. The bluefin roll was not as good as last time. The higher prices are reflected in the ingredient quality and thoughtful combinations. The service staff are kind but service can be slow. If you’re planning a weekend visit, I definitely recommend booking a reservation. There is street parking out front and in the nearby neighborhood.

This sushi place is a hidden gem! The sushi is incredibly authentic, featuring soft sushi rice that perfectly complements the fresh sashimi. While it’s a small spot, the seating is comfortable, making it a great place to enjoy a meal :)

Super fresh sushi and very friendly staff here. The service is quick and the quality is simply incredible. Sushi Hil has been the best sushi I’ve tried in Vancouver so far. The quality of the blue fin tuna and toro nigiri was indescribable. I can’t wait to return! High prices but it’s worth it.

We visited Sushi Hil during our holiday to Vancouver and cannot speak highly enough of our experience. All of the fish was so fresh and great quality. The staff were all great and regularly topped up our tea. Would particularly recommend the wagyu nigiri and the king salmon maki!

Google
Great service and cute little restaurant. Fresh and good quality fish. The sashimi was average for Vancouver (still decent) but the tuna sampler nigiri was definitely worth the whole meal. Overall, an enjoyable experience and can’t wait to go back. (They also gave us this on the house marinated daikon dish that I still think about…)

What an amazing experience The food was world class. Every dish was a hit You have to try the bluefin Tuna tasting ! If you love sushi you’d love this place Book a reservation! We sat at the sushi bar. What a great experience

Yelp
High quality, well-prepared sushi -- it doesn't get any better than this! Absolutely everything here is awesome, even including things that are easily taken for granted like wasabi/miso soup/tea etc. I've been here twice and tried their nigiri (assorted), bluefin set, chawanmushi, snow crab roll, and oyster motoyaki. I was blown away by everything. Just be prepared to make a reservation in advance and shell up some $$.

Yelp
I was in the area and looking for the highest rated sushi place and sushi hill popped up. However, I must have missed the reviews saying how insanely expensive it is. This restaurant is definitely not a regular dining spot, but more a high end restaurant for fancy people. All rolls are about $18 each, even basic ones. Nigiri is around $8 a piece. Now don't get me wrong, the flavor and quality is amazing, I was just caught off guard and felt guilty leaving after seeing the menu. The servers here were very kind and informative in regards to recommendations. A lot of guests were here for the omakase which looked amazing. Everything was made delicately with care, marinated to perfection and plated beautifully. One star lost for me because of the prices being so elevated, but delicious, just more for rich people I guess lol.

Yelp
First off, service is excellent. We made reservations for two and when we arrived, our table wasn't ready yet so the staff was very apologetic and offered us free miso soup upon sitting down after waiting for 15 mins. Sashimi was very fresh and their Nagasaki blue fin tasting did not disappoint. Place is small so make a reservation first, I would not recommend for party larger than 4 otherwise it's crowded. Sake and wine selection was abundant. We ordered their hot house sake and it was good. One thing we regret is ordering the caviar with the oysters because we couldn't really taste the difference due to the amount ponzu/condiments they already added to the fresh oysters. We ordered half dozen with caviar and half without, but both tasted almost identical not worth paying the extra $10 a piece.

Yelp
A friend came from out of town so we decided to visit Sushi Hil for a unique dining experience. When we were inside the cozy restaurant we were warmly greeted by staff and shown to our seats at the counter of the sushi bar which allowed us to see all action of dishes being assembled all night long. They don't offer Omakase anymore but it was easy to assemble something similar with all the options on their menu. We started off with the Hotate Butteryaki and ended with the Oshi. The dozen fresh oysters surprised us, their Chirashi Royale was a decadent feast of "all butter" yummy high-quality ingredients. The Sashimi Moriawase was lovely - of note was the jellyfish but it showcased a lot of fresh quality fish. We were blown away by the Nagasaki Blue Fin Tasting - the quality of the Chutoro was almost the Otoro level and the Otoro of course was angelic. Do not end with the Negitoro at the end of this tasting plate finish it with the Otoro. This Miso Soup was also awesome - large chunks of tofu and a good amount of seaweed. Solid for a rainy night. We were the last table to leave but they didn't rush us out - we saw all the hard work they did to keep the sushi bar and the general restaurant clean. A lot of love and pride goes into this restaurant. It was a great experience - thanks Sushi Hil!

Yelp
Been wanting to try this restaurant for a long time now and was finally able to try it today. It's a nice and small place great for just chatting. Servers were nice. I enjoyed the majority of the food here. Their ingredients are really fresh and they use "real" wasabi here & deliciously thin ginger (unlimited refills). The only dish I personally didn't enjoy at all was the Hotate Butteryaki. The butter flavour wasn't pronounced enough and mushroom flavour too strong. I absolutely recommend their seasonal oysters (kusshi) & their Chirashi Royale (enjoyed every bite). Will come back just for these 2 dishes alone. A good place to splurge a little.

Yelp
Not sure it was worth the price.. We got the royal chirashi which included bluefin tuna, king salmon, Wagyu beef, and foie gras. It came with miso soup and a salad. The pieces in the chirashi were small and all mixed together. I couldn't really tell what I was eating in any given bite. I would've preferred the rice to be warm with the cold sashimi cuts but it was cold. It was good but not sure if it's worth 100 bucks pre tax and tip? What do you think??

Yelp
A small Japanese restaurant with incredibly fresh seafood, located on Main Street. I made a reservation a few weeks in advance for a Friday night seating and the restaurant was packed! I had an amazing time at this restaurant. *MUST TRY* Nagasaki Bluefin Tasting (5/5) - $48 Taste: By far my favourite dish ordered. I love the variety they served with various cuts of blue fin from akami (lean) to o-toro & chutoro (more fatty). As well as the negitoro which was bluefin sushi delightfully paired with green onion. This spot had amazingly fresh, buttery, melt in your mouth bluefin that seriously sent you to heaven and back! Portion Size: 8 pieces (2 pieces each) Trio Crudo(5/5) - $20 Taste: Thin slices of hamachi, hotate, and kanpachi with a light and refreshing ponzu sauce. Great dish to try for variety. My favourite was the scallop! Portion Size: Good to share between 2 people (3 pieces each) Fresh Kusshi Oysters with Uni (5/5) - $16 Taste: Super fresh oysters paired with the creaminess of local bc uni. I can't say no to uni! Portion Size: 2 pieces King Oshi (4/5) - $20 Taste: King salmon tasted good, however in oshi form it doesn't strike a huge difference to regular salmon. The oshi did not have a super smoky flavour which I typically enjoy. Portion Size: 8 pieces Super Tuna Roll (4/5) - $20 Taste: A mixture of tuna tataki nigiri and marinated negitoro tuna rolls. The nigiri had a fresh and clean taste, while the roll was flavourful and savoury. Portion Size: 4 nigiri and 4 piece rolls Hiyayakko Tofu (3/5) - $10 Taste: Chilled tofu - a light appetizer with dashi sauce. I wish the sauce was more infused with the tofu instead of primarily sitting at the bottom. Portion Size: Good to share between 2 people [Value for Money] Definitely a fancier night out for sushi at a higher price point. I would recommend the a la carte menu so that you get to pick and choose the items you know you'd enjoy. For the amount of food ordered between two people, we definitely left full. Overall, with the quality of the fish and the variety we were able to try, it was worth the price... for an occasion!

Yelp
This is a combined review as I've frequented Sushi Hil 3-4 times now. It's a small but well lit and cozy restaurant with minimal seating so always do make a reservation if you plan to eat here. Sushi Hil is a restaurant that emulates the vibes you would get from an authentic Japanese sushi restaurant. And therefore, don't expect to be stuffed for a light penny. This is intricately prepared and curated food that the chef has put lots of time and energy in so I greatly appreciate and respect the dining experience and cost. I've attached photos of almost all dishes I've tried and they're all really good for a variety of different reasons but in this review, I'll talk about my recommendations and favourites! Appetizers: Oyster Motoyaki I don't even like oysters that much but why is this so delicious?? It's umami and savoury in all the right ways, the oyster is plump and not overbearing in flavour. There's also bits of mushroom and spinach for added texture and helps cut the thickness of the motoyaki sauce. I recommend everyone to try it at least once. This is $12 I'll never regret spending. Scallop/Hamachi Crudo If you like sashimi but sometimes want to spice it up from the typical wasabi soy sauce combo, the crudo is delicious! The ponzu sauce is light, sour, and sweet which compliments the seafood quite well. I think it's pretty standard compared to some other places that do crudo but it's a good choice if you don't want to order plain sashimi. Sushi: Nagasaki Bluefin Tasting If you are a fatty tuna belly lover then you will want to bless your body, mind, and soul with this yummy bluefin trio. It comes with a selection of red tuna (akami), chutoro (medium fatty tuna belly), and otoro (fatty tuna belly). The fish is extremely fresh and just melts in your mouth. Nigiri Set 8 piece chef selection plus 3 piece scallop shiso maki and 3 piece negitoro is a great set ($58) if you're looking for a comprehensive sushi set to try a bit of everything. This is good for first timers who don't have much preference for what fish they like and want variety. I personally don't like fish with overbearing taste and I remember there being some pieces I wasn't a big fan of. However, it worked for me because the bf likes everything so I just fed the ones I preferred less to him haha. There are 4 pieces that are sauced and seared and 4 pieces that are plain. On the contrary if you find unfamiliar fish a bit intimidating, you can opt for the maki set which is a bit more friendly to non familiar sushi eaters. Dungeness Crab Roll It's a California roll but with Dungeness crab inside. Really delicious for crab lovers and $20 is a fair price. Super Garden Roll I was pleasantly surprised with this one, normally veggie rolls can be a turn off but this one is very flavourful with 2 flavour profiles (either tomato ponzu or spicy avocado 4 pieces of each) both light, sweet, and tangy in their own ways. It's great especially for those with food preferences or allergies that have somehow made their way into a sushi restaurant! Service is awesome, your tea cup will never be empty and the servers are very kind! Only thing to note is that as it is a small restaurant, seating is very close together to ensure the max number of people can be accommodated. Please take note of this if you are sensitive to sitting closely to other people when dining. I love Sushi Hil, can't wait to be back next!

Yelp
Went here for date night Friday eve as we wanted to try out the new spot we'd seen plastered all over social media. I made a reso week of and I'd highly recommend doing so as the space is TINY - about three two seater tables, three four seaters and bar space for four in total. Location wise, Sushi Hil is right in between Anh and Chi and Nikkyu on main. We were lucky enough to snag a pay parking spot right in front of the restaurant (I think it was $1 per hour?). The good: -lovely modern ambiance with lots of wood and warm lighting -attentive service -fish was fresh - our server said the bluefin had just come in that day -no liquor license BUT you can bring your own wine or sake Between the two of us, we shared the Maki Set, Nigiri Set, Hotate Crudo and Nagasaki Bluefin Tasting (with Akami, Otoro and Chutoro). Both sets come with a miso soup and appetizer - ours came with the Spinach Ohitashi and an avocado salad. You know when you have those meals where nothing is really wrong, but nothing really stood out too much? That's how I felt about my experience at Sushi Hil. I didn't feel like I got a superb meal despite the quality of ingredients. The Bluefin was good, but at $42 for six pieces, I wasn't blown away. The Crudo is supposed to come as a trio with Hamachi and Kanpachi as well, but they ran out. Maybe that would've made the dish more interesting with the varied textures. We found that too many of the nigiri in the nigiri set were seared for no reason - why would you sear a beautiful piece of King Salmon or Ebi? The King Salmon oshi on the Maki set also tended towards too sweet and I'm not sure why there was puffed rice on it. We also found a lot of shiso used in our meal. I love the flavour but it was a little overwhelming. At almost $170 for our meal before tips and without drinks, I expected to come away more impressed. The price point here isn't really reflective of what you get and I honestly would rather go to Toshi a block away. My rating is probably closer to 3.5 stars, but I'll revisit once they've expanded their menu and have acquired a liquor license.

Yelp
We frequent Temaki every time we visit Vancouver. We heard that Chef Hil opened his own restaurant so of course we had to check it out and boy it did not disappoint. We had the omakase and each course was timed perfectly. We asked for rolls since our friends enjoy rolls. We are big eaters so we asked for more dishes at the end and the last 2 tuna add ons were some of my favorites among the night! 1 - kusshi oysters - soooo good with ponzu and shiso 2 - poached oyster gomae - really well done and refreshing. 3 - tako sunomono - no vermicelli like other Japanese restaurants 4 - tuna gomae - love the hint of wasabi 5 - ankimo tuna - fresh 6 - fresh snapper porridge - so hearty 7 - oyster motoyaki with caviar - best I have ever had. I normally don't like motoyaki but even the mushroom inside had so much flavour! 8 - chu toro - amazing quality 9 - torched o toro - melts in your mouth 10 - king salmon aburi 11 - king salmon roll 12 - BC roll 13 - tuna carpaccio - my fave!!! 14 - negitoro & tuna tatami nigiri - sooo good! 15 - panna cotta - to die for!!! So creamy and velvety $125/per person is a steal for the quality and quantity we received. Such an amazing experience, Chef Hil never disappoints. The service was attentive and friendly. Since the space is small, reservation is highly recommended.

Yelp
Sushi Hil is one of my favorite sushi restaurants all over the west coast (I'm from Seattle, WA). I love that the goal at Sushi Hil is not for everyone to experience a $100+ omakase. Sushi Hil has amazing nigiri sets and fabulous off menu cuts. We particularly like the aburi engawa. The service is always wonderful with never ending refills of tea and ginger. I unfortunately don't have pictures from this past time but the presentation is beautiful. I appreciate that the restaurant is small and there isn't loud music playing so you can really enjoy the company and the food.

Yelp
We made a reservation 1.5 weeks in advance for Valentines Day lunch. It was actually our pre lunch, so we only had a tasting! We arrived at 11:30 when they opened and every single person there greeted us. My husband is a huge TORO fan and we came specifically for the, it was so fresh, buttery perfection!!! Nagasaki Bluefin Tasting * Akami | Chutoro | Otoro | Negitoro | 8 PC Our next dish was, Albacore Tataki. It was presented so beautifully and tasted amazing. We ended with, Foie Gras and it was melt in your mouth delicious!! Service was amazing!! We chatted up one of the servers, I'm going to guess she's one of the owners. Super sweet and gave us the little back story of this new spot. We have plans to go back and have a full on dinner soon. Thank you Sushi Hil!!!

Yelp
Sushi Hil is a small space but they do take reservations which was helpful as we were coming here on a holiday night. We ordered the nigiri set, the Nagasaki bluefin tasting, and hotate butter yaki. I found the hotate butter yaki quite tasty but quite small for its price. The tasting sets I thought were a much better value, and I enjoyed the variety that came with it. It was nice to have a mix of rolls, nigiri, and salad (for the nigiri set) and sashimi and nigiri (for the bluefin tasting). I thought the fish was quite fresh and would recommend to come again.

Yelp
Thank you Chef Hil for a wonderful meal. We reserved the $150 Omakase dinner and it was absolutely delicious. The A5 Wagyu, foie gras, and oyster motoyaki were out of this world but the other dishes were also amazing. The service was excellent with our water and tea cups filled often. It as also great to chat with Chef Hil throughout the meal. We shall return!

Yelp
In continuation of celebrations, we made dinner reservations for Sushi Hil several weeks in advance. We were greeted immediately in the well-light cozy restaurant by several welcoming staff. Space was a little tight but just spacious enough that we didn't feel like we were elbow-to-elbow with adjacent diners. A quick skim revealed a simple menu with unique items. We ordered the Crudo Trio, Butteryaki Hotate, Sashimi Moriawase and Maki Set to share. Dishes were striking and fish was fresh. Uncommon flavour combinations made every bite intriguing. Not so great: The butteryaki was the single let down in both presentation and price; a single diced overcooked scallop $16. Fine: The king salmon and tuna dishes were nothing special. Highlight: The hokkaido maki teased our palates while we wanted more of the kanpachi and hotate sashimis. We came in cautiously optimistic of all the hype, but were delightfully surprised at the unique twists. Sushi Hil is one of the few restaurants of late that the food actually tastes better than it looks. We will be back soon for lunch!

Yelp
We went to Sushi Hill, a restaurant within walking distance from our home, after hearing good things about it. The menu selection is somewhat limited and the food itself is OK, but the issue we have is the price. For the four of us, for lunch, it was $200 with no alcohol, as they have not obtained a liquor license yet. For better service, food and price, we believe Toshi on 16th Ave (just two blocks away) is a wiser choice. We will not be back, sadly.

Yelp
Came here twice in one week to taste as much as I could and I must say it was immaculate. Everything on the menu was high quality and presented in such a delightful way. Melt in your mouth pieces. The restaurant itself was small but mighty ! I suggest a reservation to guarantee a spot. I will definitely be back !

Yelp
My girlfriend found this place through Instagram. I realized it wasn't on yelp yet and I got super excited I got to add a new business. I got super lucky with parking. Found pay parking right infront. Parking was $1/ hour. As we came in we were quickly greeted and seated as we called ahead and reserved table. The menu was small and simple. They had a few different sets and it comes with miso soup and an appetizers. They are currently waiting on liquor license. But I was told we can bring our own sake or wine. My girlfriend and I thought the food was decent. The price point wasn't reflective to the quality of the food. Our server told us about the specials they had. We decided to try the bluefin tasting. It had akami chutoro and o Toro. It was pretty fresh as they just got it in today. Maybe I will come back when they have a more interesting menu and alcohol license
google avatar

Yelp
This place is super likeable. Went the first time for a drink before another meal but did they don't have a liquor license yet so instead just had a quick snack at the sushi bar. The owner is the head chef and he chatted and invited us back. Seemed quite genuine Came back 3 weeks later with 3 friends and we have a lovely meal. Consider the enjoyable food it was only $80 per person before tip. Given the insane prices of nice vancouver sushi I'd say this is a great quality to price ratio. And they're only charging $20 for corkage? Steal! Recommend. But they're busy. You need resos. I made resos 2 weeks ahead and was only able to get 5:45.

Yelp
Delicious bite after bite. The restaurant is still in the soft opening phase so the menu and logistics are still being worked out but we had an amazing experience. Prices are reasonable and the quality was top notch! We are from NY and you can't get sushi like this at this price, it would easily be 3x the price in NY. The online reservation system was easy, we booked a lunch rez for 11:45 and were seated a few minutes later. The menu had a lot of items on it that I didn't know so had to ask for an explanation which the staff was very happy to help with. The chef selection is whatever the chef decides that day, I was told it could even change from table to table, which was fun for us but something to consider if you don't like certain fish. We ordered a bunch of items from the regular menu and the special menu all of which were delicious! The table next to us ordered the Maki set which we wish we ordered, it looked incredible. Highly recommend this place.

Coco L.

Yelp
Super cute and great sushi place. Reservation was easy and quick. Fish was tasty and fresh. Service was great as well. We have 3 people wanting to share 3 different sets and they modify the blue fin set to include 3 pieces instead of 2 pieces per type(with reasonable additional cost) so we could all have one. Would want to come back and try the dinner Omakase menu.

Dr Philip Y.

Yelp
I first came to Sushi Hil last winter when I went to Whistler for skiing and snowboarding, went with a bunch of friends and we had the Omakase. It was the most amazing Omakase that I've had. It was so good that we came back the next day for lunch and I got the chirashi bowl which was phenomenal. Chef Hilary is a mastermind with his creations. My girlfriend saw all the pictures from my experience and we had to come back again. I will continue to make the drive here JUST for this place. It's clean and the vibes are great. If you ever have the chance to come here DO IT & get the omakase!

Yelp
Saw a post of a new Japanese restaurant opened up on the hipster strip of Vancouver so decided to check it out. It is located in between Anh & Chi and Nikkyu restaurant. I was fortunate to find parking right in front of the restaurant. As we entered, we were greeted by the waitress and were promptly seated, the restaurant is quite small; a few seats by the sushi bar and about 8 tables along the windows and wall, however, it gave that warm vibe and ambience. The restaurant looked newly renovated and well ventilated with AC. I believe it's doing a soft opening because the menu seemed a little limited. Here were the food we ordered; 1. Nidako sunomono. The octopus, noodle and sunomono base were pretty fresh and tasty. 2. Gomae. Simple and pretty basic 3. Miso soup. Quite basic, only took couple sips of it as I preferred not the quick style way. P.s. I though my meals came with 2 miso soups, maybe I misunderstood the waitress. 4. New York beef tataki. The beef tasted fresh and tender, the sauce was okay. 5. Maki set. I personally think it was too basic and nothing special, need a little improvement on the selections. 6. Sashimi Moriawase. The sashimi were fresh and of bite size, pretty good quality. 7. Nagasaki Bluefin tasting. Akami was pretty good and fresh, the chu-toro didn't have that nice taste and colour that I am used to, the seared or aburi o-toro was way off in terms of taste; freshness and texture. When tuna is cooked, the meat becomes more stiff then most fishes and pretty tasteless. As most would agreed or know, O-toro is the best part of the blue fin and best enjoyed by retaining its natural freshness and texture. 8. House panna cola dessert. It was nice, tasty and refreshing, nice little dessert to end the meal with. Overall, the restaurant was small, but it was clean and had a nice warm welcoming ambience to it. I would say it's a nice little place to enjoy some fresh sushi with a few friends over a couple of drinks. The services were good; the waitresses were very attentive and informative on each food being served. As for the price, it's on the steeper side compared to some of the surrounding Japanese restaurants. I think the only thing I wasn't very satisfied with was the chu toro and O-toro, could've been fresher and the O-Toro was a failed to my taste. I would recommend it if you are looking for a new place to try and hopefully I can give it another go in the near future when it's fully opened and settled itself in. I would give it a solid 3.5-4 stars but cause of the chu toro and O-toro, 3 stars. This review is more of a positive criticism because I would like to see this restaurant grow and stay. I am a strong believer that honest feedbacks are key elements in improving, growing and giving a business longevity. Good luck to this business and much success!!!

Yelp
After few attempts in getting a seating at Sushi Hil we finally got one today, on a FRIDAY, through an impromptu walk-in as a few customers coincidentally finished their meals! The restaurant is relatively small and I would recommend making a reservation a week or two in advance to get the table and time you'd like. In our visit we ordered the Hamachi Crudo + Nagasaki Blue Fin Tasting + Negiri Set + Negitoro Roll. The rice here is cooked perfectly and was surprisingly what really stood out to me in each piece. The menu here is simple but they follow through with quality sashimi. The otoro from the Blue Fin tasting was literally a piece of seafood butter in your mouth melting in every crevices of your taste bud. And the Aburi included in the Negiri Set has a very unique smokiness, especially on the eel, that adds an extra bit of oomph to each bite! A nice place to treat your favourite people and for a small celebration gathering in you enjoy sashimi.

I don't normally write reviews, but had to talk about Chef Hilary's new restaurant Sushi Hil. Great location, in the heart of Main Street. Modern looking 22 seater sushi/nigiri spot. I'm from Toronto, and every time I come to Vancouver, I always want Japanese food as the sushi is so fresh out here. Also, the Omakase in Toronto are 2-3 times the price and this is by far my favourite Omakase place. The fish is fresher and more affordable to eat out at more frequently. Service/Vibe He atmosphere is not pretentious and felt very clean and modern. Really like the sushi logo on the wall and the accents of bonsai trees. I love the sushi bar, watching the chefs work their magic in a clean and organized manner. Plus it's always nice to be able to converse with the chef while he works. I feel it's a great place to enjoy meals with friends. Music isn't too loud, there is no Izakaya yelling, which makes it great for guests to enjoy their meal over great conversation. The servers were very attentive with water and tea. And always checking in without being overbearing. Quietly going about their business and letting us have our privacy. Drinks/Food No liquor license yet, but heard it's coming soon. But great to bring your own liquor without corking charges at the moment. But you will need to open up your own alcohol and pour as they aren't legally allowed to serve yet. But I'm fine with that, as I love to go to the Legacy Liquor store and find some gems of white wines and sake. The food was amazing. Every course of the Omakase wanted me wanting more. They were fresh, creative, and you can tel that Chef Hil is passionate about his culinary arts. Food looked as good as it tasted. Every course was presented and seasoned well. I will definitely be back. I'm already craving my best visit. Well done chef Hil! Best of luck on your new opening!

Yelp
Sushi alert! Vancouver is filled with competition in the sushi space, but Sushi Hil wins with a special menu and dedicated chef and staff. They say hospitality is 50% of the experience and this clearly takes all the points. We were treated to the sushi bar and enjoyed some amazing food and got to chat with Chef Hilary. His concentration to perfection shows in the quality of food and the play in flavours. Must tried include their oyster motoyaki, chirashi, and their aburi selection, s/o to that foie gras aburi sushi!

Yelp
If you're looking for an elevated sushi experience then this place won't disappoint. Providing a casual and comfortable setting, this place is small but intimate. Prices are high, but quality and standards are assured. Offering authentic Japanese dishes and pristine sushi all of which are beautifully presented.

Yelp
Mmm....tuna that melts in your mouth! Try for yourself. Drove from Seattle and enjoyed excellent tuna. This 22 seat capacity restaurant is clean and the servers never let your drink sit empty. Tuna rivals Taneda that is ranked top ten US sushi restaurants. I am looking forward to next time and hopefully they have their liquor license. Until next time.

Yelp
I am a Japanese American visiting from Los Angeles and have been to a myriad of sushi restaurants in North America and Japan including several one and two star Michelin sushi restaurants. This restaurant is as good as, if not better than, any sushi restaurant I have ever experienced. The quality of the fish, unique presentations, and variety of dishes on the Omakase menu were extraordinary and incredible. I rarely write reviews because I generally don't have a strong opinion about things but this place is phenomenal. You will not be disappointed.

Yelp
The small space is energetic and has a very cool small sushi bar vibe. Service was attentive and very responsive to all requests. While water and tea cups seemed toddler size, they were frequently refilled when required. Sushi was a mixed bag and a bit disappointing. It was baffling why they flambe so many of the Nigiri offerings vs let the dinners enjoy the fish for what it is. Unless it wasn't all fresh or high quality and they were masking that? The tamago was so big and so overpowering with strong egg flavor, I just could not finish it, as it wasn't very good. The maki on the lunch sushi combo was almost all rice and tasteless filler. I tried a local uni Nigiri and the quality of the uni was terrible. That batch should not have been served and the chefs should have been on top of that if they didn't get a good batch. After they broke trust on that, I did not even think about ordering the Hokkaido uni or any other Nigiri, as they could not deliver quality on their other uni. Not all uni is equal regardless of the regional source. On a positive side, their gomae was as good as it gets and fabulous. So, in general there are some promising signs here, but a lot of room for improvement too, in order to avoid being just another so-so sushi bar.
