"November was a big travel month for me, and as per usual, I had to partake in my Austin tradition of getting tacos before I left town. This time, we got lunch from one of my go-to restaurants. I opted for the portabella mushroom fajita (which was wonderfully meaty) and the chicken fajita (for my meat option). A recent revisit was to our favorite go-to taco spot Taco Joint on East Riverside. I decided to shake things up by adding potatoes (I have done this before to wonderful results) and refried beans to my barbacoa taco, and, yeah, this is going to become a new staple taco for me.
