Complete respect for high quality ingredients. This place is far better than indicated, slashed by petty reviewers with issues. The food and service were excellent.
We had the Japanese short ribs, filet medallions, hamachi ceviche, cheeseburger bao bun, and pork dumplings. Between our bar service and being seated we waited for a few moments at the post station and could observe a chef painstakingly slicing fanning and carefully adorning some raw fish appetizers. It was culinary artwork, not a hack job. The tenderloin pieces were nicely medium rare, the bao bun was quite unique with a foie gras dip, decadent, mushroomy but still reminded you of a cheeseburger. The dumplings were meaty and succulent with a nod towards good soup dumplings. The pork was tasty, not gamey. The skins were delicate, not gummy. The gentleman busting tables recommended either the short rib dishes and he was spot on. Our ribs were to die for! It was succulent meat candy without being overly sweet, falling off the bone. The ceviche was fresh and cured in watermelon juice that complemented the fish, rather than overpowering it. (Ie acidic citrus typical of ceviche.)
Wait and busing service were both frequent and friendly despite this place being busy. Noise level was lively but tolerable.
We came for entertainment but unfortunately too early but we're so happy we stayed for the food. We have talked about our dining experience here many times since leaving. To me, that's a mark of why a place gets five stars. I wish I had some photographs to share. I would come back here in a heartbeat.
