NYC New Restaurant Openings, October 2025 | Eater NY

"The pizza pop-up’s brick-and-mortar spins full pies ($28–$33) and cheeky snacks—from a “cold ‘carbonara’” to battered, fried onion petals dubbed the “trademark infringement”—with a full bar and $12 martinis daily from 4 to 5 p.m." - Tierney Plumb

Third Time’s The Charm - Review - Red Hook - New York - The Infatuation

"Formerly a pop-up called Bad Cholesterol, Third Time’s The Charm is a sourdough pizza spot in Red Hook with pies as classic as a margherita, and as interesting as the White Lotus Season 2, with red onion, calabrian chilis, and pistachios. A few snacks round out the menu, like something called Trademark Infringement—essentially just a Bloomin’ Onion. Buckets of Miller High Life, pitchers of beer, and carafes of wine are available, as well as cocktails like the Wrong Island Iced Tea." - Willa Moore

Din Tai Fung Is Opening a New Restaurant in Brooklyn | Eater NY

"Brooklyn pizza pop-up Bad Cholesterol grew into a full-fledged restaurant this month as Third Time’s the Charm, from owner and chef Chris Milazzo, opened in Red Hook at 275 Van Brunt Street, near Visitation Place, on Thursday, October 16. The menu centers on sourdough pizza like a spicy margherita and mushrooms, with specials such as the White Lotus Season 2 (with Calabrian chiles, pistachio, blue agave, and red onions) and the Gowanus Goddess (a vegan pie with garlic slivers). Other dishes include the Trademark Infringement (basically Outback’s bloomin’ onion), chicken nuggets with a gochujang dip, and fries served with a spicy tomato jam. Currently, the restaurant is operating with limited hours, with its full-on opening starting on Friday, October 24. The approximately 2,000-square-foot space can fit 50 people, and there’s a heated, enclosed backyard. Reservations can be booked online, and bar seats are open for walk-ins. It’s open for dinner Wednesday through Friday and weekend lunch and dinner." - Nadia Chaudhury

Redhook is lucky to have third times the charm join its ever growing list of impressive restaurants. From the atmosphere to the last bite, charm gets everything right. The pizza is phenomenal (yes as a gluten-free individual I have cheated to try it!), the drinks are well crafted, and the playlist slaps. The bar bites do offer some gluten free options, which was highly appreciated, but all of the offerings spark so much joy. In addition to the bar and table seating inside, there is a heated back patio which was incredibly comfortable. Highly recommend stopping by or making the trip over!

Probably the best chicken cesar ive had in years. The sourdough pizzas melt in your mouth with such a unique explosion of flavors & their drinks are just the perfect ratio and addition to the meal. Also, try their dips! The toum (garlic) is quite remarkable. Staff is super kind & place is so cozy, you’ll want to be a regular.

We travelled far (LIC) to eat here. The pizza was good, especially the roasted mushroom one. It had super unique flavors. The dough was a good texture, soft chewy and crispy. But it seems pretty expensive for the size of the pizza and location of this restaurant. Everything was a bit overpriced on their menu actually but luckily we used inkind. And the fried onions were super salty.

I usually judge a place based on the Caesar salad, and this one is outstanding. As amazing as the “Girl Dinner” is, the soft doughy pizza crust and unique cocktail menu really steal the show. Cacio Pepe with lime? Banger!

Get ready Red Hook, there’s a new Pizzaiolo in town. Couldn’t more excited about this opening. I’ve been eating the pizza from the owner for 3+ years and it just gets better and better. Not to mention the star of the show which is their take on a blooming onion (but it’s gluten free). Bar program is excellent as well which makes this spot a place where you can hang for hours. Especially in their cozy year round backyard. I only wish I lived closer so I could go more often.

Cozy, modern spot with excellent cocktails and surprising new flavors for classics. Highly recommend the Body in The Canal (Mezcal cocktail), the Cold Carbonara, and the Lite Lime Pizza!

Pizza was delicious. Who knew I needed some lime on my cacio e pepe pie? Drinks and wine list on point. Backyard was nice n warm in full winter cold. So happy this place is here!
