"Tucked among the rolling hills of East Sussex, Tillingham is a unique combination of winery, restaurant, working farm – and, now, boutique hotel. And on every count it's pretty special. The organic, low intervention winery uses an ancient Georgian technique, in which wines are buried for 7 months in huge clay urns or qvevri, to yield an award-winning amber tipple laden with "nectarines and marmalade". The restaurant offers super-seasonal, zero-waste menus, using beef, lamb and vegetables from their own biodynamic farm, plus a wood-fired pizza oven for unfussy al fresco feasts in an open-sided Dutch barn. Lest this all sounds too virtuous, there's also a breezy bar with bottle shop, big windows and a lively buzz. The farm itself – comprising cattle, chickens, fruit trees, walled gardens and 70 acres of woodland – is a heart-warming lesson in sustainability and soil regeneration, and a rare opportunity to connect with ancient countryside just 2 hours' drive from London.As for the 11 rooms, which are housed in a traditional hop barn, they're peaceful, minimalist and very natural – in keeping with the ethos of the farm. Think retro designer furnishings, sheepskin rugs (which you can take home from the on-site shop), pressed wildflowers and views of rolling vineyards. Or get even closer to nature in a bell tent. The whole estate was restored by eco-minded winemaker Ben Walgate, who started out stomping the grapes with his own feet. The Tillingham experience is not about luxury (although it's very comfortable): it's about a complete change of scenery and pace, and a reconnection not only with the earth, but also with your soul, your taste buds, and the lucky friend you bring. Was a lovely day out and some of the last sunshine of the summer! Staff were super friendly, wines made by Tillingham were are so lovely and smooth. Highly recommend trying their brand! The Prosecco was very crisp. They have a lovely front terrace, where you can drink but not eat. The restaurant food was beautiful and delicious, although did take quite a bit to come out. Portions are towards the smaller side, but stunning. I had the gnocchi and bisque.

We visited for the wine tour and stayed for dinner on a Friday evening. While the wine tour was fantastic, this review is specifically about the dinner—and it was amazing. We had a window seat with a stunning view of the vineyards, and I loved that you could see the chefs at work in the open kitchen. The setting strikes a great balance—elegant without feeling too formal. We chose the seasonal set menu at £60 per person, which felt very reasonable given the quality you can see from the photos) along with two glasses of wine each, which we paired ourselves with the food. The wines were local and very reasonably priced for the quality, ranging from £6-8 a glass. While I won't go into detail about every dish, the highlights were the hake and lamb for the mains (pictured below). The pulled pork ball we had as a starter was also exceptional. Our servers were attentive and professional throughout the evening. We’d love to visit again, perhaps even for an overnight stay, as we thoroughly enjoyed the ambiance (and the wine!!)

Mixed stay which was mainly down to our poor choice of room. We booked one of their midweek specials: 2 nights stay including pizza one night, dinner in Eat another, a wine tasting tour and 2 breakfasts. Room ended up costing about £145 per night. We had requested a quiet room and were given the choice of room 1 (directly opposite the entrance, with a view of the fields and a king bed) or room 5 (super king bed but view of noisy courtyard and south facing - it was beyond hot!). Stupidly we choose room 5 and hence had 2 very disturbed nights’ sleep. So don’t choose rooms 5 or 6 if you value your sleep and don’t like the heat.|Rooms have no kettle and were poorly cleaned in places. Ours also had a rug which was a dangerous trip hazard (see photo). Very patchy WiFi in rooms - but they do warn you of this.|On a positive note, the tour was informative and flowed with wine; the pizza was delicious; the terrace had great views and the food in Eat was tasty. Breakfast was also good - although you have to pay extra if you want something cooked.|Note for management: if you must play music loudly, please can you just have one source? At one point both the barn and the bar were competing in terms of both volume and track. It was headache inducing.

Wow what a setting . This place is a hidden gem. We ate in the restaurant which enjoys beautiful views of the surrounding countryside. The food was delicious every course full of flavour and presented with creativity and flare. I can’t wait to go back. The menu changes regularly not only to keep things fresh and interesting but because they use local seasonal ingredients. The staff are all amazing, friendly, passionate and proactive. Book your table now you will not be disappointed.

I took my wife for pizza and was hugely disappointed. On arrival, I asked the waitress the difference between the two red wines on offer. She said she didn't know as it was her first day: this leads me to know she's been inadequately trained. Not her fault. I then watched the pizza chefs closely as I've just purchased an Ooni and was looking to pick up tips. They goofed around reading each other's temperatures with the pizza thermometer (hilarious) and tossed the dough around in the air line pros. Then my pizza arrived and the bottom was black. Not burnt but charcoal. That aside, it was bang average - I've made better at home. No good looking the part of you can't do your actual job. There were then problems with the card machine which meant I had to wait ages before paying in a different location. It was not worth my time and I won't be going back.

We are regulars. Location and ambience are fantastic and staff are always friendly and welcoming. Culinary standard is still very high in the restaurant but it’s become much more expensive, the recipes are now fussier with much smaller portions and slow service between courses. I’d still recommend it for a special occasion but if you’re hungry and wanting robust flavours stick to the pizzas.

Overall good experience, tasting tour is very good at £35 for tasting 4 different types of wine. However reception’s attitude can be more helpful when it comes to customer service, especially when there were two of them, they were not busy and just chatting with each other. The way they treated me was very dismissive. In the end the staff at the bar& restaurant helped me and my friends when it was supposed to be the reception’s job.

Only worth dropping in for a glass of wine - avoid otherwise. Rooms have gone massively down hill in last couple years, despite prices going up - they feel unloved and run down, and were dirty/poorly cleaned. Food in main restaurant is simply bad - they use an egregious amount of butter in every dish to which is lazy cooking and will leave you feeling sick/gross afterwards.
