Seats can only be booked online, and often are released the same day or day before. This is by design so that the shop is "easier" to visit if you're local.
I've eaten a lot of sushi in Japan and Sawada is probably the most religious experience I've had. The flavors are rustic and punchy, and the course is quite large. You will likely walk away stuffed and needing to chug some water.
There's reason this remains one of the top ranked sushiya in Japan, even after 20 years.
