"In addition to a shortened version of its regular menu, Richard Sandoval’s Latin diasporic restaurant and lounge in Cherry Creek’s Hotel Clio is offering a three-course prix fixe special on both Christmas Eve and Day (reservations are available for lunch and dinner until 8 p.m.). For $79 per person, it centers on an entree of chile-crusted prime rib au jus with lobster tail and creamy horseradish sauce, accompanied by a choice of salad with roasted beets, green apple, pomegranate, and candied walnuts in orange-hibiscus vinaigrette or butternut squash soup with roasted garlic, ginger, caramelized apple, whipped crema fresca, and spiced pepitas; it also includes one side — three-way potatoes or grilled broccolini and bok choy — and hibiscus corn cake with a caramel reduction for dessert." - Eater Staff
