Rice rolls stir-fried in XO sauce have char that a young Blackstone only dreams of replicating. Sweet-and-sour chicken is a hot, crispy highlight. And we truly can’t stop eating the Szechuan fish swimming in peppercorn-steeped broth. Weekend dim sum is also pretty good. (We’ll forgive a bit of extra grease in that case.) No need to drive from Renton to Shoreline just to experience this one, but if you’re in the area already, treat Triumph Valley like your Chinese go-to.
