"Sushi Kawashima pursues its own way in the sushi world, a route that crosses paths with the food culture of Nara. Sashimi is dressed with hishio, a koji-mould and salt-water mixture said to be the origin of soy sauce. Snacks are served with preserved so, a condensed-milk product enjoyed in ancient Japan. Yamato tachibana pepper is a seasoning made from an ancient citrus fruit. Sushi of gizzard shad with persimmon leaf testifies to the chef’s lively imagination. Nigirizushi is formed without wasabi, to bring out the flavours of the topping and sushi rice. Persimmon-leaf tea is a relaxing treat to end the meal—a nice Nara touch." - Michelin Inspector
"The meal starts with seasonal clear soup, which is followed by a piece of nigiri and then seafood tsukuri. Grilled items are decorated with seasonal leaves. Hiroyuki Kawashima trained in Japanese cuisine and his preparation of the sushi toppings and seasoning of the rice with akazu is all from studying it himself. The tamago-yaki at the end is the farewell dish, and he stamps his name on it with a branding iron, imprinting the name on the customer’s mind at the same time." - Michelin Inspector

"The chef shares the joy of receiving a Michelin star with family and staff, and aims to create a pure and virtuous sushi menu." - MICHELIN Guide Japan
Definitely wasn’t expecting such an amazing and life changing experience! From every course that was served in front of us last night, you couldn’t help but to smile with beautiful joy and feel the love and thought that was put into the fish that was sacrificed for our body to refuel on! It was such a unique and beautiful experience! You definitely wasn’t going to leave feeling hungry! 😋 Thank you chef for making my trip to Japan worth all my life and and now I can pass away happy! ❤️ I highly recommend trying this Omakase if you can even get a reservation! It will change your life!

Sushi Kawashima is a hidden treasure. Before we arrived, I wondered why it would be worth going so far (South of Nara) to eat sushi in a country full of high-quality sushi. Chef Hiroyuki Kawashima showed me to be foolish as each course was a gift to my soul. My companions and I learned about each fish as we enjoyed the unique preparations and stellar quality traditional sushi. The flavors were woven together in a beautiful story as more complexity and umami were added throughout the evening and I understood the importance of the restaurant's location in the heart of so many premium quality ingredients. A stop here will be on my list for every future trip. Arigatou gozaimasu, Chef!

We have eaten at many Michelin and omakase restaurants in the United States, and this is by far the best experience we have had! Any sushi we have after this will be ruined because this was too good! Chef Kawashima was so kind and took the time to translate for us. The location may be a little far from popular tourist destinations, but this was definitely worth the trip! I would highly recommend this place to anyone and everyone!

Le repas était incroyable. J'ai découvert des poissons très intéressants. Coup de coeur pour l'oursin. Le chef et son assistante étaient super sympas !
