"Though not widely known, chef Martin Wishart singlehandedly revived Edinburgh’s fine-dining scene. Case in point: Before he arrived in 1999, there were precisely zero Michelin-starred restaurants in the city. Now there are several, including his eponymous spot in the historic Port of Leith, where he serves “classically French, proudly Scottish” cuisine. Here, diners can choose from à la carte, six-course, and eight-course menus, complete with such standout dishes as roasted duck breast with red cabbage, beetroot, macadamia nuts, and red currants."
