"Inside the property, La Loba serves a plant-filled, timber-accented Spanish menu from Barcelona-born, James Beard–nominated chef Oscar Amador Edo (who worked at El Bulli); the dining room was lively on our midweek visit. I liked the balanced cocktails and mocktails at the bar and appreciated the flexibility of the à la carte menu alongside a seasonal tasting menu; highlights included a smoked candied salmon montadito topped with Tillamook truffle cream cheese and local honey (though I preferred a more savory take on the region’s salmon), a tableside butcher’s beef tartare that incorporates bone marrow and a flight of sauces—an entertaining, worthwhile dish—and a crisp tarte flambée layered with pastrami, crème fraîche, caramelized onions, and manchego that we could have ordered seconds of. Service reinforced the friendly tone of the hotel, with staff checking in midmeal." - Jennifer Flowers
