"Opened in 1950, Canlis still occupies an important place on Seattle's food landscape and serves some of the retro-steakhouse dishes that put it on the map. But you won't find them on the menu, which lists only three-courses of modern creations from chef Aisha Ibrahim—dishes like a chilled Dungeness crab, tofu, and cucumber salad, with an oil of grilled cucumber skins.
