Founded in 2002, Novo was a local pioneer in the third-wave-coffee movement, championing ethical sourcing, house roasting, proper brewing and presentation, consumer education. The reputation it has made for itself even since extends far beyond its own brand, with its beans making their way to high-end chocolatiers and craft breweries around Denver.
