"Located in Chapinero, this restaurant is known for its “ciclo-bioma” tasting menus that earned Leonor Espinosa the title of the world’s best female chef in 2022. The menus weave together ingredients from Colombia’s diverse ecosystems, including mojojoy rainforest worms, Andean cacay nuts, and pulantana, a decaffeinated coffee alternative from the Guajira desert, highlighting little-known native foods in a fine-dining context. Above the restaurant sits La Sala de Laura, where sommelier Laura Hernández Espinosa, Leonor’s daughter, showcases Territorio, a range of seven distillates made from native ingredients such as passion flowers and coca leaves, created to disrupt the state monopoly on spirits that has historically suffocated artisanal production and to honor women around the country who are protecting their traditions and families." - Stephanie Rafanelli
