"If you’re already a guest of Rosewood Bermuda, walking into this clubby, whitewashed dining room might give you a real sense of déjà vu. After all, much of the boutique hotel oozes an upscale British Colonial vibe that pours into its restaurants, rooms, and public spaces, so it’s no wonder that Sul Verde—Rosewood’s southern Italian trattoria—feels very much like the rest of the resort. Borrowing heavily from the Campania region of Italy, the dishes here are classic Southern Italian specialties (think eggplant parmigiana and linguine vongole) alongside traditional favorites from nearby regions (like veal saltimbocca with parma ham and sage). Kids and adults alike will devour its thin-crust pizzas—try the carbonara, with Pecorino Romano and Parmesan cheeses, guanciale, egg yolk, and black peppercorn—but it’s best to save room for some of chef Maximo Villagra’s authentic desserts, or at the very least, a scoop of gelato alongside a chilled glass of limoncello." - David LaHuta
