"This restaurant in Chinatown under the shadow of Manhattan Bridge has long drawn crowds with its diner-comfort menu (think: excellent egg sandos and Korean fried chicken wings), but make no mistake, its pancakes are the main event. Perfectly round, risen like a soufflé, and with an optimal syrup-to-butter ratio. This is not any old butter, either but salted honey butter that performs one very important role—to cut through what would otherwise be deadly sweetness. Because these pancakes arrive pre-soaked, or as my colleague Traveller UK digital director—and fellow Golden Diner pancake fan—Sarah Allard says, “oddly… submerged.” It’s that salty umaminess, served further by the addition of lemon zest and tart berry compote, that takes the Golden Diner pancake from really good to exceptional.
