"Opened this weekend in Dun Huang Plaza, this Taiwanese boba shop—often dubbed the “Hermes of bubble tea”—is the chain’s first Texas location and part of a network of more than 70 shops worldwide. Franchise owners Long Le, Trang Dinh, and Hoa Le, whose extended family operates other local eateries, brought the concept to Houston after falling in love with it during trips to Taiwan and plan to expand to Austin and possibly San Antonio in the next year. The operation emphasizes theatrical, freshly made boba and brewed-to-order teas with an open kitchen where dough is kneaded, extruded into pearls, boiled, then cooked and caramelized on a large golden wok-like pan so customers can watch the process from start to finish. Signature items include a Brown Sugar Boba Milk made with organic milk, creamy milk foam, and a torch-car-amelized top similar to crème brûlée; a showpiece Gold Foil Boba Milk topped with an entire sheet of edible gold and served in a cup with a diamond-shaped lid (priced at $13.86); plus offerings like Boba Soft Serve and Dalgona Boba Coffee Milk topped with hand-whipped dalgona. The menu also features freshly brewed teas such as jasmine green tea with honeycomb and Damascus rose tea. The shop is open daily from 11 a.m. to 11 p.m." - Mai Pham
