"Flatiron’s subterranean cocktail bar Thyme Bar is known for using ingredients rarely seen on drinks menus, like bael fruit and bird’s beak chile or orange shaved ice and used coffee grounds. The low-waste bar is now delivering five-ounce single serving cocktails, including some not previously available on the bar’s menu, like the Glimmer, made from gin, matcha, and lemon juice.
