"I learned that Rice Chicken, renamed from Ssal Chicken in Korea, is slated to open its first U.S. location in Rancho Penasquitos, San Diego, in February; general manager Phillip Chung and his father Louis — who previously operated spots such as Convoy Tofu House and Mapo Korean BBQ — are overseeing the San Diego franchises and plan to open three locations in 2019. Their fried chicken uses a gluten-free rice flour coating that makes the chicken extra crispy and will be offered with a range of toppings and sauces, including honey-garlic, sweet and spicy, and a “snow cheese” parmesan powder; there will also be grilled chicken, various sides and snacks, and fried chicken sandwiches. The Rancho Penasquitos space is about 2,075 square feet with a 500-square-foot patio, features fast-casual service and a bar area with TVs, and will offer eight to ten beers on tap." - Candice Woo
