"Planned for late spring or summer at 225 N. Wabash Avenue, the Perilla Korean American Steakhouse is being conceived as a chef’s-table and grill-table experience aimed at Korean business travelers and the local Korean community (weddings and private events are explicitly part of the brief). Oh and Lim tapped AvroKO for the design and even visited South Korea to dial in plans; the kitchen will emphasize wagyu (Japanese, Australian, and American), dry-age beef on site, and a chef’s-counter tasting-menu format that grills cuts behind the counter rather than parading raw meat on a cart. Despite the chef’s counter, they don’t want the space to feel overly formal — the goal is high service on par with top Chicago steakhouses without the stuffiness — and it will be an all-day restaurant offering breakfast and weekend brunch (including Korean-style morning options and possibly a beautifully grilled whole fish).
