"Originally opened more than two years ago at 132 6th Street in SoMa as Taboon before quickly changing its name to Frena, the city's only kosher bakery is expanding to 5549 Geary Boulevard (at 20th Avenue) in the Richmond District and plans to open by the end of the month. Partner Isaac Yosef says the new location is convenient for a big Jewish area with several synagogues, but emphasizes that Frena's challah, zaatar bagels, and burekas—based on recipes from his business partner’s grandfather—aren't just for those who keep kosher (kosher is a bonus so everyone can come and eat). Frena also runs a catering business; most baking will remain at the 6th Street production facility, while the Richmond outpost's brick oven will bake some items and toast pita pockets “Frena style” (stuffed with boiled egg, pickles, spicy sauce, and onion and baked a second time). Yosef insists “you have to have a good rugelach” and is most proud of Frena’s pitas, noting that “pita must be played by ear” because the baker has to feel the oven and adjust yeast and proofing—he praises head baker Yanni and the staff (about 70 percent formerly incarcerated), highlighting a commitment to giving second chances; staff has been hired and the Richmond location will open shortly." - Caleb Pershan
