"Since 2019 I’ve followed chef-owner Jose Luis Alvarez’s “sushi on the road” food truck as he grew it into a brick-and-mortar, now occupying 2,325 square feet in the Rancho Sierra Shopping Center at Craig Road and Rancho Drive (the space formerly housed Sushi Bar Sage and Kaisho Sushi + Ramen). At Louie Louie Sushi Bar y Más he serves an expanded Japanese-Mexican fusion menu — true to the restaurant’s name there are sushi, nigiri, and sashimi choices alongside tacos, tostadas, and micheladas — and he keeps his hibachi-equipped food truck in operation while offering hibachi-grilled lobster, shrimp, filet mignon, and salmon in the restaurant. The menu also includes poke salads, special and classic rolls, and appetizers such as stuffed jalapeño, gyoza, fried calamari, and shrimp tempura; Alvarez’s resume includes time at Osaka Japanese Cuisine and Solaro by Wolfgang Puck at the Palazzo.
